Nice, i spent quite some time in Mexico but don't recall eating or seeing this. Your name sounds a bit Dutch, possible?

I am from Belgium so I am happy you're not from the Netherlands :-). Left Belgium +20 years ago, 15 years in India now, nice to meet you, saw your post in the ecotrain linkdrop...

Well, I figure we all lose our heads one day, so why not! 15 years in India, wow! From what I gather from @eco-alex, @ecoknowme, and the whole @eco-train, you guys got something awesome going there. Best of luck with future projects, and excited to read about them here!

OMG David I do not think even a Mexican knows so much about such delicious and delicatessen food.
I from the depths of my being thank you for presenting the food so emblematic of my country and with all the research you do to present it.
These exquisite mushrooms where in other countries they call the Mexican truffle or the Aztec caviar is being used more in preparations even of desserts, good as it is the Mexican food is an intangible good for the humanity so it classifies the UNESCO.
And again thanks David for all the information you give of Mexican food and apparently I see that you enjoy it!!!!

Thank you for this nice comment, @gladysstillwagon. I try to include all the info that I can, but as you can see, there is always more. So I appreciate anything you add, such as the names of Mexican Truffles, for example, or its classification of the UNESCO, which I didn't know about.

Chilaquiles are really good, it's getting harder to come by authentic mexican food here in the US. Thanks for sharing.

Oh, Mexican food is soooo easy to make, if you got access to some good chiles, and decent corn-dough. And where there's dough, tortillas should not be far either.

Sounds very interesting an I bet there are some really good benefit to eating it too :)

Oh, I'm sure. Apart from the protein I mentioned, there must be all sorts of awesome effects of eating wild and crazy things like a corn fungus!

Long forgotten are drilled out of us. These things will come back to our attention on a mass scale very soon :)

Very cool article. Really enjoyed the read. I don't like blue cheese that much, but I would at least give this a try. Have you ever had fermented foods such as Korean kimchi?

Kimchi? Hehehe, once I got a small jar of onion kimchi, which I turned into a baby-tub full of cabbage-mixed veggie kimchi. I love ferments! Now I feel like making some again, and posting about it. :-)

This sounds wild! I have a rather intense mindblock about consuming mould though (I'm afraid to eat cheeses that are sold with edible mould..somehow fail to appreciate the taste hehe), so I'm not sure I would have more than just one nibble.

Thanks for pointing it out so subtly that I've been misspelling "mould" throughout the whole text! Fixed. And don't worry, as tasty as huitlacoche is, it's not that great to make it worth radically suppressing your mould-shyness.

mould = British spelling

Both are accurate! hehe..I was schooled in American spelling, but my keyboard is tuned to a British spell-checker, and I'm too lazy to change it, so I type the British spelling often these days to avoid the annoying red dotted underline under my American spellings LOL

Point noted about the huitlacoche..I would still take a nibble to try though =))

That explains why my spell checker marked it when spelled with a 'u'. The things we learn... Consulting the dictionary I saw mold meaning the hollow form for pouring something, and got thrown off: that is not the fungus. But yeah, makes sense. Now I could change it back, but in the blockchain nothing gets ever erased, so might as well leave it.

hehe, yes, I also checked the dictionary before typing out my previous reply..and the 'fungus' definition is listed last of all the definitions..hahaha
