FINALLY TRYING SOME SWEET POTATO LEAVES

Until last night, we'd never tried eating these.


New things, strange things, different things... Around here, we seem to be willing to try about anything, and there is a whole world of delicious food that is not available at the supermarket, so in a lot of ways it has been like steeping out into the unknown. Last night, it was sweet potato leaves.

IT'S ABOUT TIME WE TRIED THESE

A popular method for starting new sweet potato plants is to place the full sweet potato in a jar of water. Usually, the sweet potato will begin to send some "slip" sprouts out of the top of the potato and some roots out of the bottom. Each of these slips can then be planted to create a new plant, which is how were are growing the next generation of sweet potatoes.

We've known that the leaves of the sweet potato plant are edible for quite some time now, but we've never previously tried them. Rather than waiting for the ones in the garden to vine out, we decided to try some of the leaves off the slips, just to get an idea about what we're dealing with. @Mama-pepper sauteed some last night with some butter and onions.

It was a great side to enjoy with our venison tacos and baked "regular" potatoes and it rounded out the meal rather well. Much like their parents, the @little-peppers were also excited to try these out. Yes, we actually have children who are excited to try a new vegetable!

The @little-peppers actually beat me to the taste test last night. As usual, they ate them up and even looked happy about it, which they do with just about every food. These tasty leaves are a great source of vitamins and minerals, most notably Vitamin A. We are now also looking forward to trying these leaves raw, rather than cooked.

Much like the @little-peppers, I thoroughly enjoyed eating these. Growing up, I never even ate the sweet potatoes, much less their leaves. Now though, my children can enjoy both of them as they grow up and they can have a more diverse diet too! It seems like everyday we are living and learning, and each day is a new adventure! Sautéed sweet potato leaves with garlic is awesome! So healthy and added bonus you grew it yourself. Glad your littles one liked it. Still trying to find new veggies for my little guy to try.

Sweet potato leaves are a big delicacy in east Africa, especially Tanzania. We stir fry with quite a bit of tomatoes, onions, peppers,salt its perfect.

Here in the Philippines, iv noticed they eat it more like a salad. Think they blanch it then mix with raw tomatoes, onions and sprinkle bit of lemon /lime juice.
@little-peppers are blessed to have such varities.

I too had never eaten sweet potatoes until I was an adult. Boy, was I missing out. Didn't know you could eat the leaves! I have some growing for the first time in my garden. Guess I'll be picking these for a salad! Your kids eat everything because they see by example. My kids weren't picky eaters either. They were given lots of variety and not told anything about veggies being yucky. Now my granddaughter is a different story. Her mother won't eat veggies!

It's a tough one nowadays when they have flavour overloads from packaged food. Chemicals affect their taste buds. You literally have to catch them early and just ignore the complaints. Maybe if they grew their own food together it would help the little ones be part of their meals :)

Sweet potatoes also make great gnocchi! I don't know if you saw my post about Catalpa trees, the bark has many curative properties including for snake bite, antiseptic...

Just be knowing that there are sweet potatoes and yams. They are different species.

And, i do not know if yam leaves are edible.

Good on ya, looks like they were tasty.

To propagate I usually just put the sweet potato in the ground and cut vines into one foot lengths. Put the tuber end of the vine in water for a few days until the roots form a inch or two, then plant.

If you have good soil and moisture, sometimes all you have to do is cut a one foot piece of vine and bury the the cut in the ground a couple inches.
