Double Chocolate Banana Muffins a.k.a Chocolate Banana Bread, Recipe and Photos

These double chocolate banana muffins are my latest recipe for you this Monday. And my favourite part about them?! There’s absolutely no added sweetener, and they taste like chocolate banana bread! Guilt-free and very yummy! They’re only 100 calories per muffin and they're organic with just a few clean ingredients that you're gonna love.

Here’s how I did it:

Ingredients

3 ripe bananas
2 eggs
1/4 cup cashew butter
1/2 cup coconut flour
1/2 tsp cinnamon
1/4 tsp sea salt
1/2 tsp baking soda
1/2 tsp baking powder
1/4 cup cocoa powder
1/4 cup cacao nibs
2 scoops collagen protein powder (for a discount on this at futherfood.com use the code NATASHA10)

Directions

Preheat oven to 350 F. In a large mixing bowl mash the bananas. Then add the eggs, cashew butter, coconut flour, cinnamon, sea salt, baking powder, baking soda, cocoa powder and collagen powder and mix until well combined. (The collagen powder is optional, but definitely recommended as it has huge added health benefits.) Then fold in the cacao nibs, setting aside a handful to sprinkle on top.

Take a muffin pan and line with paper muffin cups. Pour the batter into each cup (about 3/4 full). I used two spoons to get the batter evenly into each cup. Sprinkle the remainder of your cacao nibs on top of each muffin.

Bake for 20 minutes. Then let cool for 10 - 15 minutes. Eh voila! Double chocolate banana muffins ready to go!

One of my goals in posting recipes on steemit is that I want to make eating healthy easy for you guys. And I want to give you recipes that are fun and that you'll be motivated to make yourselves.

It honestly took me some time and a continual effort over the course of about two years to groove in really healthy eating habits. I spent the better part of a year researching what goes into my food, and then another year getting used to healthy habits around that. But now that I've put in that effort, it's really like second nature to me. And so, rather than you guys having to spend that kind of time and energy yourselves (because I know it can be a lot! And that’s probably why many don't even bother), I hope that I can share with you what I've discovered and how I'm applying it so that you can use it too. Without all that work!

The harsh reality that I learnt after a lot of research is that many food corporations don’t actually have our best interests in mind. And if we want to control what goes into our food and ensure that it includes clean healthy ingredients, then we have to take a certain amount of responsibility for that. So I hope my recipes and research can help you in that direction. And that overall is really what I hope to contribute by sharing my content in this amazing community and on other social media platforms.

I've been clicking through some of your recipes, and they look awesome! Just curious, what are some of the collagen health benefits? Is it like a protein powder, and if it is, why do you like it better than other protein powders?

Thanks! I like to use protein powder, especially on days when I exercise, but I have trouble digesting whey protein. I've been trying different plant protein powders, but they tend to have weird tastes... I'll have to look into collagen more!
