in #life7 years ago

Hi Steemians and Happy Monday!

I'm so excited about this recipe! These donuts are healthy and tasty... and pretty much guilt free! They're gluten-free, refined sugar-free and organic. And the chocolate flavour have quite a kick.

I especially love these donuts because they have two of my favourite food groups: chocolate and peanut butter. Oh, are those not food groups? Well they should be!

Also, you should know that the cocoa powder in the chocolate flavour is an awesome superfood. It's packed with minerals, and it helps fight aging, assists in weight loss, and protects against heart disease. And... it gives the perfect wake-up. It's great as an alternative to caffeine! (In case you haven't noticed I'm super buzzed from having eaten way too many of these already..)

And not to mention the added collagen in these, which gives them that extra health benefit. (See my earlier post on collagen smoothies for all the reasons why collagen is amazing. Below are pictures of my ingredients mixed together for the chocolate flavour and for the peanut butter flavour in separate bowls.

Then I poured the batter of each flavour into the donut pan...

This was a surprisingly easy recipe too. (The only thing you will need to make sure you have is a donut pan, or this could be a bit tricky. You can get them at pretty much any store that sells kitchen appliances.) Then I baked them for 12 min at 350 F.

Eh voila! All done!

Ingredients:

1/2 cup sweet potato puree (chop sweet potato, then boil 12-15 minutes, then mash with 1/4 cup water, until it forms a puree)
1/4 cup milk
1 egg
1/2 cup maple syrup
1/2 tsp vanilla
1/2 tsp cinnamon
1 tbsp melted coconut oil (I used Bulletproof XCT coconut oil)
1/2 tsp sea salt
1 cup oat flour
1/2 tsp baking powder
4 scoops collagen protein powder (I used Further Collagen)

Directions

Preheat your oven to 350 F. Mix the above ingredients in a bowl until a thick batter forms and batter is smooth with no lumps. Then divide the batter in half, and put the other half in another bowl.

In the first bowl:

Add 1/2 cup melted peanut butter (or almond butter). I used peanut butter.

In the second bowl:

Add 1/4 cup cocoa powder
and 1 tsp cinnamon

Then grease your donut pan thoroughly. And pour batter into donut pan. Then bake at 350 F for 12 minutes. Remove from the oven. Let cool. And then be careful removing donuts from the pan. I used a sharp knife to loosen the edges from the pan and slowly lifted the donuts out.

Thanks! Appreciate it!

Mmmm... Peanut butter! But gluten isn't bad at all unless you are allergic. It is pure veggie protein!

Thanks @buzzbeergeek! Yes, agreed. I like to provide that option though, and sometimes it's just a preference.

Hey guys, just wanted to add that this recipe was inspired and adapted from Alyssa Maccarrone at alyssamaccarrone.com.
