Mama's Best Lemon & Herb Roast Chicken
Once upon a time, not so very long ago, Mama showed you how turn one roast chicken into three nourishing meals.

She however forgot to show you the first step, and that is how to make the very best Lemon Roast Chicken.
Mama tends to be quite absent minded these days, with her head in the clouds as usual :)
Sigh...back to cooking...all that is required for a juicy lemony roast chicken, is:
The grand dame of the show, or it may be a duke? - One whole chicken, trimmed of fat and all things unmentionable.
1 lemon, cut in half
A few sprigs of fresh herbs, in this case fragrant rosemary & thyme
Your favorite chicken seasoning
Lay your chicken on it's back.
Squeeze the lemon juice out, pour half over and inside the chicken.
Cut the other lemon half into four pieces.
Season the chicken, stuff the cavity with one half lemon, tuck the remaining under the wings and thighs.
Season with your favorite chicken seasoning.
Turn your chicken over with its' bottom facing up, pour remaining lemon juice over, season and pack the herbs underneath and on top.
Mama says if you have time, you can cover the chicken at this stage and leave it to marinate. This will make your chicken even more tender and packed with flavor.
Spray olive oil all over (if you don't have a spray bottle, sprinkle a couple of drops over the chicken).
Place your chicken uncovered, in an oven at 190 C.
A tip from Mama; always roast your chicken breastside down. This keeps the breast meat lovely and moist plus the crispiest skin is on top.
Turn temperature down to 180 C after 45 min; roasting time in total is about an hour and a half, depending on chicken's size.
Remove your golden brown crispy chicken from the oven and allow it to rest before carving.
Remove from pan to carve and serve with crispy rosemary roasted potatoes, creamy butternut mash and spinach.
Sad to say, Mama was in too much of a rush so did not make use of the lovely juices from the pan, which would have made a deliciously rich gravy.
Papa Bear went on a gravy hunt in the kitchen, but as Mama Bear always says, gravy is a bad idea if you're trying to keep that middle age spread down!
Mama reminds you to make sure you eat all your spinach or there will be no dessert afterwards ;)
