One chicken three ways - Second edition
I will tell you a story about a chicken which was magically turned into three meals by Mama.
Once upon a Sunday, as always on a Sunday :) Mama prepared the roast chicken lovingly, longing for the days before the fledglings fled the nest! The silence in the house, not a thing out of place nor a crumb anywhere, made the emptiness even more real!
She lathered the chicken with lemon juice and fresh herbs from the garden, and pushed the lemon halves into the cavity. Roast potatoes and the freshest green veggies completed the healthy Sunday lunch, but afterwards much of the large roast chicken was still untouched.
After lunch, Mama sat down at the table, pondering how different things were at the Sunday lunch table, no messing and no bantering between the fledglings, but how she longed for that now! Mama faced a dilemma, as always on a Sunday :) what to do with the large Sunday roast chicken now that only Papa, Mama and Gran were left behind?
She sat down at the big kitchen table, flaked all the chicken meat off the carcass, and instead of keeping this for snacking or sandwiches as usual, she had the bright idea of using it for her famous Chicken & Mushroom Pie, plus the carcass would be turned into a nourishing Chicken & Veg Soup.
A steaming bowl of thick soup and a piece of homemade pie would be lovely now with the sudden chill in the air, winter’s way of saying ‘Goodbye, I’ll be back soon, so don’t think you can discard the winter woollies just yet’ :) Mama thought spring was here to stay, but then the chill happened again!
She sighed, happy that her Monday meal was sorted! Meat and carcass went into the refrigerator to rest until the next day, and Mama went out onto the porch and fell asleep in her favorite chair, dreaming of the days the house was filled with the noise of children's laughter.

On Monday morning, Mama poured a little hot water into the roasting pan to extract all the lovely juices and goodness, which together with the carcass, would become the stock for her nourishing soup.
For her soup, she placed the following into a large pot:
Chicken carcass, 1 cup dried split peas plus about 3 litres of water, and cooked this until the split peas were soft (about an hour). While this was cooking, she placed the following vegetables into her food processor for chopping (can also be grated on a hand grater):
3 Carrots, 2 potatoes, 1 onion, some leeks, celery & parsley, adding it to the stock. Mama further added a few handfuls of pasta shapes, checked the seasoning and continued cooking it over a low to medium heat on the stove top for about another hour. Mushrooms were diced and added during the last 15 minutes.
Mama says this soup can be varied by using red lentils or barley as your base, or you could make chicken and corn soup by replacing the carrots with corn off the cob or frozen corn.

Next, Mama went on to make the Chicken & Mushroom Pie, to be served with the sweetest corn and baby cabbage.
All she needed for her pie was:
A punnet of mushrooms, a bunch of chopped spring onions, parsley and one small diced onion.
She sautéed this in a little butter, added the flaked chicken, and lastly added a tin of cream of mushroom soup, stirring till the ingredients were all nicely distributed.
Mama spooned this mixture into an ovenproof dish and quickly mixed her easy pie topping, which she poured on top of the filling.
For the topping, Mama beat together & poured on top of the filling:
Half a cup Milk, Half a cup Oil, 1 Egg, Three quarter cup Self-raising Flour, 1 teaspoon Baking Powder (not Baking Soda) and Seasoning to taste.
Note from Mama: if you do not have self-raising flour, you can use normal cake wheat flour but add 2 1/2 teaspoons baking powder, not just one :)
Mama baked her pie at 180 C for about 35 minutes until it was a nice golden brown.
How the fledglings would have enjoyed this pie, Mama thought to herself, if only she could have delivered a piece to them tonight :)
That is the end of my nostalgic story, hope Mama inspires you to try your hand at baking your own chicken pie. Mama says you can vary the filling - Spicy chicken filling, or add diced bacon to the chicken for a rich smoky flavor.
