Coxinha is a really typical Brazilian recipe that my husband LOVES ๐Ÿ˜ and they seem to serve these things at every party, celebration or barbecue that we go to.

I have made these at home on a few occasions, but it's definitely not a quick and easy meal, so I would only reccomend attempting these if you have some time and a lot of love to put into your coxinha. They are well worth it though! ๐Ÿ—

Coxinha are super cute, yummy fried chicken balls. The chicken inside is absolutely delicious and you can dip these in your favourite condiment, or the traditional molho rosรฉ (a mix of mayo and ketchup).

Ingredients: 2 chicken breasts, 1 litre chicken stock, 6 teaspoons minced garlic, 1 onion, 1 tablespoon of white wine vinegar, 2 tablespoons ketchup, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon cumin, 1 handful fresh minced parsely, 50 grams butter, 375ml milk, 450g plain flour, 2 eggs, and fine breadcrumbs (not panko if you can help it, I use Krummies!).

Step 1. Start by boiling your chicken breasts in the stock so that you can shred it up once cooked. I used this time to prep other ingredients like chopping my onion, parsley, and measuring out flour and spices. Once chicken is cooked, save the stock and leave to cool as we will need it later for the dough!

Step 2. Heat onions and garlic in frying pan. Once softened, squirt in your ketchup, add your spices (salt, pepper, cumin), the white wine vinegar, the chicken and the parsley. This is your filling which should look something like this. Set aside to cool.

Step 3. Time to make the dough! Combine 375ml of the leftover chicken stock from before with 375ml of milk and the 50gram of butter in a pan and melt together.

Step 4. Add the flour to the liquid and stir vigorously for a few minutes until the dough starts to form and come away from the sides of the pan. Put it on a plate and leave with your chicken filling to cool. Once cool, knead for around 10 minutes until its bouncy.

Step 5. Time to put the coxinha together! Pull off small balls of dough and work with your thumbs and fingers into round discs, like the one sofia is holding here.

Step 6. Add your filling! just about a spoon worth of chicken mixture. You then want to bring the sides of the dough up around the mixture to enclose it inside, and try and make it into a little ball shape with a pointy top. (Kind of like a chicken leg ๐Ÿ—)A fun one to do with your kids!

Step 7. Whisk a couple of eggs into a bowl, give your little coxinha a bath in the egg wash, shaking off the excess and then coating them in breadcrumbs.

Step 8. You can deep fry the coxinha. I prefer to use my airfryer, which I love, it always makes the food come out perfect! I spray my coxinha with a little extra virgin olive oil spray all over and place them into the basket at 180 degrees for around 20 minutes. You will have made about 25-30 coxinha, so I keep mine in the fridge and fry once ready to eat them!

Step 9. Coxinha should be golden and crispy on the outside when cooked!

It's always nice and fun to read your blogs but this time with all this photos you made me hungry and since i am not a master chef (unfortunately) i will go straight in my kitchen and make me some sandwiches (simple classical ones as others i don't know how to make).... i bet coxinha is extremely delicious!!!
