Can I have a show of hands, who likes TACOS?!!

In my house, we do tacos a lot, at least 3 or 4 times a month.

Once and a while, I will change up the mix, as is the case here

My Dad is a purest, he doesn't like it when I mess with his taco ingredients, but my Mom on the other hand loves it when I add variety to the mix.

Barley is a great substitute for rice, and if you ask me has more health benefits.

RECIPE

Yield: 4 - 6

Ingredients

Spanish Barley:
2 tablespoons olive oil
1 small onion, finely chopped
3 cloves garlic, minced
2 cups pearl barley
2 cups enchilada sauce
2 cups chicken stock
1 teaspoon oregano
1/2 teaspoon cumin
1 teaspoon salt

Peppers:
2 medium green bell peppers, sliced into rings
1 medium onion, sliced into rings
2 tablespoons olive oil
salt & black pepper to taste

Tacos:
8 - 10 medium flour tortillas
1 1/2 cups cooked chicken, chopped
2/3 cup fresh cherry(or regular) tomatoes, diced
1 cup butterhead lettuce
1 cup shredded cheddar cheese
sour cream (optional)
salsa or hot sauce (optional)
cilantro lime hummus or chipotle hummus are both delicious with these too.

Instructions

Spanish Barley:

  1. Combine onion, garlic, and olive oil in a large skillet and saute over medium high heat for 3 to 4 minutes until soft and browned. Pour in remaining ingredients, reduce heat to low, and cover. Simmer, stirring occasionally, for 35 to 45 minutes until barley is tender and liquid is absorbed. If the liquid is absorbed before the barley is tender add a bit of water to the pan.

Peppers:
While the barley simmers, heat 2 tablespoons of olive oil in a medium skillet and add peppers and onions. Cook for 6 to 7 minutes until peppers are softened. Season to taste with salt and pepper. Toss the chicken into pan and stir over heat for about 1 minute to warm then remove from heat

Tacos:
Assemble the tacos with barley, chicken, lettuce, tomatoes, cooked peppers and onions, cheddar, and desired sauces.

This is my tortilla recipe:

Yield: 12 Tortillas

Serving Size: 1 Tortilla

Ingredients

5 Tbs. lard or palm oil for vegan (you could also use shortening but I do not recommend it.)
1 cup warm water
1 tsp. salt
3 cups flour
Instructions

Combine flour with the fat and salt and use your hands to work the fat into the flour. When its pretty well mixed add the water and knead until you have a nice little round ball.
Now clear a clean work surface and spread flour. Separate dough into twelve equal balls and set aside.
Roll out each ball into a circle as close to round as possible. If you have a tortilla press you could use that. Don't worry if it's not perfectly round they still taste just as good.
Now heat a skillet on your stove, or use an electric skillet like me, to about medium high.
Cook tortillas on each side for 30 to 40 seconds depending on how high your heat is. If you start to get little black spots on each side then your heat is too high. As you cook each one place done ones somewhere to keep them warm and moist or they will dry out. You can either make a foil packet and keep them wrapped or use two plates with the second one upside down.

They don't eat tacos, in fact nothing Mexicano. The food here is very plain and simple, VERY fresh and good, just simple.

Not sure I could handle it, I love not simple food :) I'd just be the gringa cooking all the wierd food, as always,
