FlaminGirl's recipes! #76 - Vegan Energy bars [Rice&seeds]
For today I have a recipe that sure they will love, is practical to make and very delicious, how many times we have been at work and suddenly gives us an infinite hunger, so we should always have even some appetizer that we can enjoy not to torment our stomach, so I have devised this recipe for those times, it is a homemade snack of rice and seeds that will have nothing to envy to a commercial energy bar. Let's see how this delicious recipe is prepared.
Vegan Energy bars [Rice&seeds]
My secrets INGREDIENTS
♡ 2 rice crackers
♡ 1 tablespoon of grated coconut
♡ 4 tablespoons rice or barley molasses
♡ 4 tablespoons sunflower seeds
♡ 4 tablespoons pumpkin seeds
♡ 4 tablespoons sesame seeds
♡ Crispy rice (rice sticks)
PREPARATION
Cooking time: 15min
Total: 35min
The first thing we will do is to select sunflower seeds, sesame and pumpkin, then we must wash with plenty of water to remove all other impurities typical of their production process where they tend to be from seeds that are not in good condition to some type of dry straw.
The next mission is to heat very well our best frying pan to subject the seeds to a quick roasting process, we can do this separately as each seed has different ways of roasting, sesame for example tend to roast faster because of its reduced size, while pumpkin seeds tend to dehydrate more slowly.
In a deep dish or soup bowl we can crumble our rice biscuits and we will be adding the grated coconut, we stir very well until it is a homogeneous mixture, then we can heat in a pot the rice molasses, it is important not to add water only we need to stir very well.
The molasses with the action of heat in a few minutes this liquid and is just at that precise moment where we add the rest of our ingredients and proceed to mix very well, it is important to keep the kitchen low heat so that we do not burn and achieve that our mass is formed well compact.
Then pour our dough in the mold of preference to let rest at room temperature, once cold if we want them to be more crunchy we can put a few minutes in the oven.
We only have to cut to the extent we want and serve.
We can take our bars with us to any place for when we get hungry or as a complement after breakfast to provide us a lot of energy.
