My dear foodies,

Today I am writing once again about Mexican food. This is because they have dishes which could be considered naturally vegan. Their diet and recipes incorporate lots of beans and vegetables. It is true that their gastronomical culture does include meat but it also has dishes like guacamoles which are perfect to accompany different meals. And if you have ever made guacamoles before, here I will give you a very Mexican way to serve them - with some delicious chips or Mexican nachos, another of the famous dishes in this North American country which has given us so much culture.

The standard presentation usually given to these mexican nachos is a triangular shape and the size would also be different from the portions below, but I leave that up to you. They can go with food like beans, sauces, and guacamoles among others. You can also offer them as an appetiser in any get-together when you receive guests or to share with your family.

My secrets INGREDIENTS

(for 2 portions):

♡ 100g Corn flour

♡ Wheat flour, 1 spoonfull (tablespoon)

♡ 80 ml Hot water (approximately)

♡ Salt

♡ Frying oil

PREPARATION

The first thing that we will do will be to find our best mixing bowl to mix the corn flour with the wheat flour and the salt. It is extremely important that everything is very well mixed before proceeding to the next step. Beforehand we will heat up water, bring it to the boil and then let it cool off a little bit. It is equally important to add water gradually, little by little. No adding it all in in one go because we would ruin the recipe. We have to try to keep adding the water that’s needed to keep the dough smooth and pliable.

Then we need to wrap our dough in cling film and put it in the fridge for half an hour. If you have a kneading machine, you can use it. In my case, I have opted to do it manually.

After leaving it for half an hour, we take out the dough, lay it out as level as possible as if we were making Italian pasta, except that we will fold this stretched dough in 2 sheets. Now it’s time to heat up a frying pan with a generous dose of oil to fry our nachos. We will fry both sides until it browns more than the sun, and to get rid of the excess oil we will use kitchen towel – this should work perfectly to leave us nice dry tortillas.

Ready, don’t let them get cold! Serve them up now!

Now here comes the million-dollar question: what can we serve our golden brown, super crunchy nachos with? Well, with guacamole, though if you want, you don’t have to use guacamole – you can use any sauce of your choice. You’re free to choose.
