Hey, today we celebrate Christmas all over the world and the party continues until December 31st!!!
So, let's continue celebrating and enjoying with our friends and of course with our loved ones.
For today I have a delicious vegan appetizer, healthy and cheap^^. This is a mushroom paté with cilantro and lime. You can offer it as a starter or to enjoy while we are consciously drinking our favorite liquor. Let's see what it's all about.
MUSHROOM PÂTÉ WITH CILANTRO AND LIME
My secrets INGREDIENTS
♡ mushrooms (approx. 250gr.)
♡ 1 onion
♡ 3 tbsp. rice vinegar
♡ 1 handful fresh cilantro
♡ 1 tbsp. lime juice
♡ Salt
♡ Pepper
♡ lime zest (optional)
PREPARATION
Cooking time: 10min
Total: 20min
Cut the onion in brunoise (squares) and fry it. When it is golden brown, add the mushrooms and let it cook over medium-high heat to prevent the ingredients from boiling with the water from the mushrooms.
When the water released by the mushrooms has evaporated, lower the heat and let everything simmer. When the onion and mushrooms are well done and browned, add the rice vinegar and continue cooking over a low heat for another 10 minutes. At the end of cooking, add salt and a little pepper.
Grind the mushrooms and the onion. When the pâté is cold, add the chopped fresh cilantro, the lime juice and a little bit of lime zest if you want a more intense flavor.
