My Homestyle crispy Chicken Schnitsel Recipe :)
Simple to make and is always a crowd pleaser!

Crispy and golden from the outside, tender from the inside! This is always a crowd pleaser in my house :) No matter how much I make, it always gets eaten to the last piece!
This is my kids favorite meal, and whenever their friends are over - they always ask for my famous chicken shnitsel:))
Its great since it can go with almost anything on the side - from simple white rice and veggies to pasta with tomato sauce, corn on the cob, mashed potatoes, salad, pickles and more.


I personally eat it with a squeeze of lemon juice which gives that crispy coat a nice zesty taste :) or even do the kid version and give it a little dip in some tomato sauce :)

I hope you get a chance to try it out. Its one of the first things I've learned how to cook. I remember it taking a few tries to master the juicy tenderness flavor with the crispy topping but I did it! and this recipe never lets me down :)

Homestyle Crispy and Golden Chicken Schnitzel - Recipe

Ingredients:


2 large chicken breast fillets (about 400g each), halved into 2 thin fillets
¾ cup bread crumbs
¾ cup Japanese panko breadcrumbs
salt & freshly ground black pepper, to taste
2 eggs, beaten
2 garlic cloves, minced
vegetable oil - for frying

For serving: 1 fresh lemon, cut to wedges/ Sliced tomato/ Tomato sauce


Method:


-Place the chicken breast between 2 sheets of baking paper and pound to the desired thickness (You can also slice them with a sharp knife to your desired thickness)
-In a shallow dish whisk the eggs and mix with the minced garlic.
-In a separate shallow dish place the bread crumbs, Japanese panko breadcrumbs, salt & pepper and mix together.
-Dip each piece in the egg wash and then coat both sides with the seasoned bread crumbs. Set each finished piece on a platter until you're ready to fry.
-Heat a pan on medium heat and add about 2cm oil. In batches, cook the schnitzels for about 2-3 minutes each side until golden.




NOTE: To Keep the Schnitzel Tender:
You DO NOT want to over cook the Schnitzels- they will turn out VERY dry. Depending on the thickness- the frying time varies. For thin pieces about 2 minutes each side would be enough, whereas thicker pieces can be fried about 4 minutes each side. In order to check- you can make a small cut on the Schnitzel: if it is still pinkish in color, leave to cook a bit more. if it started to turn white, flip to other side.
-Drain on paper towel and keep warm.

This is great as a weeknight meal and once you get the hang of it, its very simple to make and you get a fine, juicy, tender chicken with a crunchy golden coating, not to mention - very satisfied tummies! :)

this is indeed a meal pleaser. The kids know that when they hear pounding going on in the kitchen, mom's making something goood! For reasons that go back to my very younger days in college, we would make schnitzel but we called it 'sexy chicken'. not sure why, but it made us laugh.

Your schnitzel looks amazing @cooknbake.Love your step by step guide and layout of your post.My kids too love a good schnitzel.Here in the UK we have a version up north called the Parmo.It is a schnitzel but covered with a beschamel sauce and parmesan, then it is finished in the oven.It is very rich and hearty but ultimately the best comfort food.Thanks for sharing will be making this dish as it has been a while.😂👍🏼
