Sharpening Session - Gyuto
Hey guys!
This is a video of one of my sharpening sessions.
I do apologize for the quality of the video - especially the sound. I had too much confidence in my Nikon Coolpix, so it is a bit out of sync. Luckily, I haven't recorded myself too much so it's not a big deal.
I did record a voice-over for some parts because the sound did go from bad to rubbish really fast.
The knife in session is a 25cm Gyuto in 1095.
This is a sharpening I do before it goes into the acid. So, after this, it will go back to hand sanding for a touchup, than etching, handle, and back to stones for a final sharpening.
Stones used were:
400/1000 diamond plate
1000/4000 cheap stone
1000/6000 King
10000-12000 Welsh natural stone
Strop with polishing compound

This is the kind of video to take the edge off the day. Pun intended. I used to watch this guy who would find old rusty clunker knives and make them super gorgeous! Do you do stuff like that at your shop?
Hey, yep I do a restoration job every now and then - they are fun. Most of the time though people bring me something that's not really worth the time and/or effort.
