Heya fellow plant-based munchers. It has been a while since I created a video, but here we go. Though I always enjoy the process of making a video, what's even better... I got a whole (minus a few test bits) chocolate bark in my fridge. On top of that, it's my 2 days off. Happy days I would say.

What have you guys been up too? We just faced two crazy weeks at the bakery before the quiet season hits. Taking a long weekend next week, another one for our birthdays in 2 weeks and in June we close for 3 weeks. More happy days coming up.

But hey let's talk chocolate bark. It is super delicious, 100% plant-based, and kinda healthy too.

VEGAN CHOCOLATE BARK


INGREDIENTS


½ cup unsalted nuts and/or seeds of your choice
⅓ cup large flake dried coconut
½ cup virgin coconut oil
½ cup cacao powder, sifted if necessary
¼ cup pure maple syrup (optional)
1 tablespoon smooth almond butter (optional)
Pinch fine sea salt
Other add-ins like goji berries, mulberries, hemp hearts, etc

DIRECTIONS


  1. Optional: Preheat oven to 300F (or 150C). Add your favorite nuts and seeds to a baking sheet. Drizzle with a little coconut oil. Roast nuts and/or seeds for about 10 minutes. Then add coconut flakes and roast for a few minutes more.
  2. Line a 9" square pan, tray or a small baking sheet with parchment paper, aluminum, or plastic foil. Set aside.
  3. If you live in a colder climate where coconut oil is in a solid state, put a pan on low heat. Place the coconut oil in the pan until it is completely liquefied. Remove from heat.
  4. Add the cacao powder, maple syrup (optional), and nut butter (optional). Keep stirring until mixture is silky and all the ingredients are mixed properly. If using unheated coconut oil and you are having issues dissolving the cacao powder, lightly heat the mixture on the stove and keep mixing until homogeneous.
  5. Stir in half of the add-ins (seeds, nuts, goji berries, coconut flakes, etc). Experiment with combinations. Put in whatever you want to the mix. Add nuts, goji berries, coconut flakes, and natural sweeteners for some crunch and flavor. You can even put in rosemary, mint, chili, or coarsely ground black pepper or salt if you want a unique kick to your confection. Mix well.
  6. With a spatula, spoon the chocolate mixture onto the prepared parchment-lined pan or sheet and smooth out until it's about ¼-½ inch thick. Sprinkle on the remaining nuts, seeds, coconut flakes, etc.
  7. Place into the freezer on a flat surface for about 15 minutes, until frozen solid.
  8. After it hardens, it’s time to break off chunks and enjoy your DIY homemade chocolate. Store in the fridge.

I have never tried chocolate bark. I have heard of it before but I was somehow never really interested in it. Now when I see it it looks delicious! And so easy to make! I just wonder who would eat so much chocolate in our household of two :)
