What's Cooking Challenge: My Baking Experiment - Baked Grated Potato Basket with Baked Egg

This is a post responding to being tagged by @heartscally for @jaynie's #whatscookingchallenge! I made something for snack as my baking experiment.

Have you heard of rosti before? It is grated potatoes seasoned with salt and pepper and it is super yummy. I ate it at a private kitchen of a homechef where there are options of cheese and other ingredients to go with it. I felt it is a lot of hard work involved so I never even think of attempting it because well, I am lazy Hahaha and I don't really go for very difficult recipe unless I am extremely 'desperate' or have the whole full day to myself.

So, no homemade rosti UNTIL....

I came across this video on Facebook one day and saved it in my links. Well to be honest, I have ten thousands links saved but not attempted too. Lol.

This is a recipe I learnt from the Pioneer Woman, Ree from the Food Network. I saw it was really easy to make and it looks absolutely beautiful, so I thought I may give it a try. (My teaser for you is that I failed in following the recipe and the outcome isn't as beautiful 😜)

My caution for you: this post is actually a humourous joke and perhaps you will learn nothing from it because my experiment failed! Still, it may be quite funny to read!

Ingredients:

2 potatoes
3 eggs
salt and pepper
butter

Methods/Steps:

I have nothing to advise because my outcome failed and seriously, please DO NOT follow my steps.

  1. I baked the potatoes for 20 minutes with the oven temperature at 250C. (It should be 400 C but my local oven has a maximum limit of 250 C. So, perhaps I should bake longer.)

  2. After the potatoes have cooled down, grate them using a box grater preferably but I didn't have it so I used a normal grater. Mine turned out to be starchy so I knew it has gone wrong and won't look like what Ree has made.

  3. Next, I seasoned the grated potatoes with salt and pepper. I lined them up in the muffin tray which I have brushed with melted butter beforehand. I used my fingers to form a basket and pushed them against the wall of the tray gently.

  4. I baked the potato basket in the oven for another 15 minutes till they looked golden brown. By now they smelled quite fragrant.

  5. I cracked an egg into each potato basket (which already didn't have the weaving structure of a basket I intended to have). Well, one of my egg yolks broke, so it didn't look too presentable 😜

  6. Before I baked it in the over for 15 minutes, I seasoned the egg with some salt and pepper. (I think the baking time for eggs should be reduced and the process should have been watched closely.)

I went away to be with my boy for that time being (as he had been asking for me to paint with him) and came back to see my eggs "exploded" and puffed up. Lol. I laughed when I saw my failed experiment. So laugh with me!!!

I had to have my apple cider to relax because I knew this experiment was going downhill. I was trying to still chill and let it be, lol.

They smelled nice but really looked not appealing at all. Usually, I fail more in my baking experiments than cooking. Though I was very reluctant to show you the photos I have taken, I am still going to do it. Haha, please do not stone me, just laugh along!

Well, this is my failed afternoon snack but the family will be eating it anyway. Thank God I only made 3! Hahahahahaha...

@happycrazycon your post is so sweet.If i could be honest and tell you the amount of fails I have had in the kitchen you would laugh.The worst was my pancake getting stuck to the ceiling.😂😂.Right i love my rostis it is a staple in the UK.Personally i never boil the potatoe as they disintegrate into mush.The point of the rosti is to be nice and crispy on the outside.So if you make it again do not boil.Grate it raw then drain all the water out it and add egg, flour, baking powder amd salt.Also i think your oven was way to high cook on a very medium heat that way the egg wont explode. Don't give up.If first you dont suceed try, try , try again! Cookings about experimenting and seeing what works.👌❤

Wow I'm so thankful for your tips on making rosti :) haha your pancake stucked on the ceiling? Would love to see a picture of that. Haha.. Good we can laugh at all these funny experiments lol.

Yep.I use 500g of grated uncooked maris piper potatoes ( put grated potatoe in a tea towel and drain excess water), 1 egg yolk, 1tsp baking powder and 1tbsp flour , salt and pepper to taste ( i like to slice red onion in my rosti- makes it sweeter).Mix all together flatten in 4 round disks. Put in oven gas mark 4.Brush or spray with cooking oil before you put into the oven until crisp and golden.To be honest if you defo want runny egg i would just poach it seperate and add it once rosti is done.Hope my advice helps you.👌 ps check out some of my recipes on my blog may give you some inspiration😊
