STEEMIT CULINARY CHALLENGE #43 Panzarotti (Small Donuts)

Hello, Steemians,

I am Christel, and I live in France on an island called Corsica. I hope my English is okay. I am happy to announce that this is my first time participating in the #steemitculInarychallenge.

Today, I am introducing a delicious Corsican dessert to bring on a picnic for an autumn feast with steemians! It's called Panzarotti (small donuts).

INGREDIENTS

  • 125 g chickpea flour
  • 250 g of wheat flour
  • 3 eggs
  • 50 g sugar + sugar for coating
  • 1 tablespoon salt + 1 pinch salt
  • 500 ml of water
  • 1 sachet of chemical yeast
  • 1 sachet of vanilla sugar
  • 1 cédrat* or 2 organic lemons
  • 2 tablespoons orange blossom
  • 50 g brandy (it's in the "real" recipe but I prefer to replace it with amber rum)
  • Oil for frying.
    *The cédrat is a Corsican citrus fruit. If you want to know more, here it is in French and in English.

DIRECTIONS

Part 1

1- In a saucepan, sift the chickpea flour, gently stir in the water and the teaspoonful of salt.

2- Put on low heat and stir for 20 minutes with a spoon. Yeah, I know, it hurts your arm. 💪💪💪 You are sure that it is ready when you pass the spoon at the bottom of the pan and the dough does not fall on the wall (as shown in the picture).

3- Transfer to a bowl, cover with cellophane paper and let cool.

Part 2

1- In a large bowl, mix the sifted wheat flour with the baking powder, sugar and vanilla sugar.
Make a well in the center and add the eggs, rum (or brandy), orange blossom water, lemon zest, and a pinch of salt.

2- Mix well.

3- Stir in the chickpea flour mixture and stir vigorously.

4- Cover the bowl with a cloth and leave the dough to rest for at least 2 hours at room temperature or overnight in the refrigerator.

PART 3

1- Prepare a glass of water with the pinch of salt.

2- In a saucepan with very hot oil (important), place a little dough. I use an ice cream spoon to get the right amount.

3- Dip the spoon into the glass of water every time, so that the paste sticks less.

4- Let them color for a few minutes. You see? It's magical. They'll turn themselves over if they are cooked well.

5- Drain them on paper towels.

6- Roll them in powdered sugar.
