3 Color Dessert

The dessert is decorated with coconut flakes and ground nibs cocoa

My first entry in steemit ironchef is a reminder of the flavors of my childhood and they have accompanied me wherever I go and I try to reproduce them in my recipes.

The first layer is a mixture of ground almonds with dates made pure and cocoa nibs ground is the crust. I put together two dessert boxes and left it in the freezer for longer until it was harder. Then I put it in a rack where I added the melted chocolate to give it another presentation.

I grew up in the south part of Mexico in Veracruz is a state where it is very prodigal, there in your soil grows any number of plants, flowers, and fruits. It has all climates from the mountain, desert areas, and an extensive beach area.

There is an area called fog forest that in the world there is very little and a strip passes through Veracruz
The products I am using in this recipe grow throughout the state as mango, the fruit of the cactus in English is "prickly pear", and when the fruit is sweet in Mexico they say Tuna and if it is sour it is a "xoconostle" that It is a Nahuatl term.
This fruit is used in many dishes in Mexico since I am doing it now in this recipe they make ice cream and many other things.


The fruit of cactus or nopal is used in the treatment of diabetes, due to its high content of mucilage, a type of fiber that helps regulate blood sugar. Therefore it is very appropriate, in addition, to control the weight.
The incredible thing about this fruit and the cactus is that when the Spaniards arrived in America they got to know this plant and they take it and once La tuna is introduced in Spain, it was distributed throughout the Mediterranean basin. This is how it currently exists in the wild or cultivated throughout the Mediterranean basin: Italy, France, Greece, and Turkey, reaching Israel, where it is known by the word "sabra", which means prickly on the outside but sweet because inside.
In Mexico, there has also a song it has the famous Tuna and, above all, it is a hundred percent Mexican product like the tequila that has the denomination of origin.
Cocoa is Mexican and a large production of cocoa is in the state of Tabasco and likewise with cocoa is made refreshing beverages and the usual use as chocolate in the state of Oaxaca and Veracruz make an infinity of handmade chocolate of different flavors cocoa is one of the 21 ingredients of Mole important festive dish of Mexican food and as a reference 100 gr of cocoa has the necessary amount of magnesium that the body needs, considering that magnesium regulates more than 325 chemical activities in The human body is to imagine the importance of cocoa in food.
And another product that I am using is the coconut that likewise grows on the coasts of the Gulf of Mexico and the Pacific, so Mexico is a place where its food is considered by UNESCO as intangible of humanity because of its diversity of dishes that would not end do so many in one life because there are as many states as regional dishes are.

*Ingredients*
1 ripe mango, 1 red Tuna (cactus fruit), 300 milliliters of cashew milk, 3 teaspoon of agar agar, 1/4 teaspoon curry, coconut milk 100 milliliters, 1/4 cup of cocoa nibs, dark chocolate, coconut chips, 7 dates, 1/2 cup of almonds, 9 tablespoons of stevia

Steps
Half a ripe mango must be pureed, add 3 tablespoons of stevia and the curry is stirred very well
In a saucepan add the cashew milk only to heat and add 1 teaspoon of agar agar. It is stirred very well with the light off until it has no lumps, the mixture of the ripe mango is added, it is stirred very well and put in a flat bowl and goes to the refrigerator for about 20 minutes. coconut milk without sugar 100 milligrams is added 3 tablespoons stevia and cocoa nibs well ground and stirred well.

The same procedure in a casserole is added cashew milk only to be heated and added 1 teaspoon agar agar. Stir very well with the light off until there are no lumps and add the coconut milk already prepared with cocoa and stevia. The container is removed from the refrigerator and the next layer of coconut milk is added to the refrigerator for another 20 minutes.

the third layer is with the fruit of the cactus,
peels the fruit becomes pure and sneaks to remove the seeds this fruit is delicious in itself so just add the stevia 3 tablespoons and now. The same procedure in a casserole is added cashew milk only to be heated and added 1 teaspoon agar agar. It revolves very well already with the light off until it has lumps and the fruit is called Tuna makes a bright red color if you do not have this fruit you can use the dragon fruit and the same is added a third layer and wait for set.

Cut the dessert in two to see the color divide after the chocolate layer and I can tell you that the taste is spectacular you can perfectly distinguish the flavors and in the end it is an explosion of flavors that I can tell you is the best thing I have done in a long time, because I'm not a sweet person so when I do something like that I like the original flavors to be marked in their own flavor. Regardless that the fruit itself is very tasty, it must be very ripe to taste better its flavor and there is in that red color that I buy, green and yellow and there is a lodging also and the benefits of cactus are because it is a source of nutrients, such as vitamins A, C, K, and B6, as well as riboflavin (vitamin B2) and minerals such as calcium, potassium, magnesium, and manganese. ... But especially the nopal is a great source of dietary fiber, which makes it very digestive.
I use it from raw in juices until roasted or boiled accompanied with a salad.

Gracias Gladys! these look so gorgeous and I always wondered what you do with these tuna's! i always saw the older folk where i live in spain picking them, i always wondered what dishes they would make with these, i'm going to have to try it as they are blooming all year round!

Hola me encanto tu receta porque ademas de que se ve deliciosa tambien sus ingredientes son sanos y con un alto valor nutricional. Me gusto el uso de la stevia como endulzante! si es increible lo que puedes usar en la cocina, siempre he dicho que la cocina es un gran laboratorio donde
hay que experimentar los sabores entre sí, experimentar entre ellos que siempre sale un resultado.
Como la fruta del cactus se pueden hacer muchas cosas como este postre helados combinarla como aderezo de ensalada y tantos más.
