Hello @progressivechef. I present you one of the few vegan recipes I make. My kids love it with mashed potato, buut I eat it with a fresh salad.

Ingredients :
1 medium broccoli
3 garlic segments
2 medium potatoes
30ml of olive oil
1cup of buckwheat flour

We crush the broccoli and the garlic together.
We grate fine the potatoes and put it all together in a bowl with a flour and olive oil. You can add a little of salt.

We mix it everything well, and start to form de croquettes. We put baking paper on a tray.

We preheat the oven to 180 degrees and we bake it for 20min.

And here you have it.
It's very easy to prepare.
