Everything's Gone Green: Moong Soup, blissfully.....again. Plus a share of SBI

You all must think that all I eat is soup. You'd be right - the last few weeks have been hell due to some pretty emotional stuff going on in the family and we've been hit by a cold on top of that - so all I can do is throw a heap of vegetables in a stockpot and hope for the best.

Moong soup isn't going to kill me, I figure. In fact, as I've written before, it's supergood for cleansing the system as well as providing all the nutrients I need such as zince, potassium, magnesium, folate, manganese, copper, and various B vitamins. I'm so exhausted that I feel like a need a huge hit of all of these, plus I'm craving greens big time, and need to listen to my cravings.

Greens are about all my garden is producing at the moment, as we are between seasons - I have new leaves of beetroot, lots of silverbeet or chard, spinach and self-seeded broccoli seedlings I haven't separated yet and may not, as I'm fairly sure they've cross-pollinated and won't be viable anyway. The beauty of a super-green soup is that you can also put weeds in it - nettles would be my favourite, if I could find any. I also put celery in this, because celery has a natural saltiness to it that flavours your soup.

The other secret ingredient in this is two whole bunches of coriander. Although my coriander is still just wee seedlings poking up from the warm Autumn soil, I had to buy some to complete this soup. I can't wait til the vegetable garden gets going again so I don't have to buy a thing - it really irritates me when I need to, but coriander and I have a love affair that just won't quit.

Everything's Gone Green Moong Dahl

  1. Soak 2 cups of moong beans overnight. You can use yellow split peas or channa dahl, but it ain't gonna be as green, is it?

  2. Cook the beans with 2 cinnamon sticks and about 4 slices of fresh ginger until the beans are beginning to soften.

  3. In a frying pan, fry a bunch of spring onions in ghee, then add 2 tsp of cummin seeds, a tablespoon of turmeric & 1 tsp of ground coriander or coriander seeds and stir until fragrant.

Then, add your vegetables. I'm not going to give you a measure, because it's really not needed - more vegetables and you'll have more vegetables in your soup and will probably need to add more water. Soup is brilliant as it's really NOT rocket science - in fact, I don't even know if it's soup science! Here's some vegetables I recommend:

  • celery sticks and a few tops
  • silverbeet, chard or spinach
  • nettles
  • beetroot tops
  • young broccoli leaves
  • dandelion greens
  • any other green edible weeds that are seasonal to your area, such as ramsons

Cook until the beans are beginning to disintegrate and the vegetables are soft. Then, take half of your soup and blend it until smooth, and then return it to the pan. I like doing this as it's a compromise between a creamy soup and a chunky soup and is just the right consistency for me. You might like to add stock to taste at this point.

Serve with a slice of lemon and some black pepper. Black pepper helps you absorb the benefits of the turmeric.

The thing is, I'm getting a bit bored of my own soup and am really interested in other recipes for your throw-together soups because steem-ing hot soup is souper (he he) and I can see myself just living off it for the winter months. Hmm.. I'm going to mediate on my soup recipes tonight and see what I come up with.

Whenever i get sick I want my mom to appear instantly in the kitchen, which of course never happens. That's when I miss childhood. Everybody needs taking care of sometimes, hope you have some help.

My husband is sick too. And I know what you mean about your Mum. I want my Mum but she's in hospital looking after Dad. Ugh. I did buy a fluffy dressing gown though....

I am going to rock a Vegan Pumpkin, Roast Garlic, and Rosemary Lasagna tonight - I will be back to document that beast later on! It's heading into the cold months here in NZ, where abouts in the world are you located?

Yes I roasted the pumpkin, garlic and rosemary in the same pan, yummers. I live in Wellington up in the North Island. Took some pictures as I prepared the meal, will cobble together a post a little bit later on.

Lovely. Ah I have only ever been to the North Island. My best mate married a guy from Raglan. He is there now actually, at the Vipassana centre, do you know it? Look forward to seeing your concoction. Last time I made lasagne It was a vegan one and probably the best lasagne I have ever made! I did a tempeh layer and it was really good. The vegan beschamel was challenging!

Posted the lasagna last night if you want to check it out. I'm not actually familiar with that centre, I definitely want to check out Raglan soon though. We recently had a couch surfer who came to us from Raglan. Funnily enough he was an actual surfer as well - Raglan is known for it's 'sick waves'
