Carpaccio of Dorada

This is not even a recipe, but rather an idea for you for experiments, although if everything is done as it is written, it will be very very good.

Chilled dolts can now be bought everywhere. Like any cage fish (and almost all the dorada is ubiquitously caged, like seabass and all possible trout, salmon, remember this), it is somewhat boring,

But carpaccio or tartare from it is obtained perfectly with a minimum of costs and effort.

Important - there are only 5 ingredients, so the quality of the fish and olive oil will solve everything. About the juice from the packages I will not say, ok?

Take a very good butter, a delicious orange and in 15 minutes you will have prepared a very fast and very light snack,

And maybe a full dish. You clean it in the fridge and let it be there waiting for a feed.


Ingredients:

  • Dorada
  • Orange juice
  • Olive oil
  • Sea salt
  • Black pepper ground
  • For submission:
  • Salad mix (with bitter leaves)
  • Cherry tomatoes
  • Capers
  • Lemon

Cut the fillet finely with thin petals - wipe the knife with a damp cloth after each cut. Then it's easier to make slices equal and of equal thickness.

Marinate fish in olive oil, freshly squeezed orange juice, gently season with salt and pepper. Leave in the refrigerator for at least 2 hours.


Serve with your favorite greens,

Better bright to taste, like arugula or a chair, sweet cherry tomatoes and capers.

Important! Do not take a lot of orange juice - it contains enough acid, so that in a few hours of pickling the fish "weld", it will lose transparency and elasticity, instead of karachto you will get a sevice. Half a kilo of fish take 3-4 tbsp. L. Juice.

Ceviche is also delicious, but it should be seasoned differently - take lime juice, quite generously, about half a kilo of fish, about 2 limes and 1 orange. Take the fish fat, like halibut or salmon, and cut it into cubes. In the marinade, add the head of the thinly sliced ​​red sweet onion, chopped cilantro and salt. Want to -

Add red or green fresh hot pepper to taste (or ground). Marinate 2-3 hours (although it is quite possible to serve and immediately, who loves as much).
