Make your own kumis

Making our own kumis is a very satisfying activity, because you take control over some of its characteristics like calories content, etc, and you save money.

This is how I make the kumis I consume at home:

Ingredients:

  • 1 Liter of Milk, can be pasteurized, UHT, or even crude, because the bacteria Lactobacillus you will put into the milk to make the kumis, produces substances that inhibits other evil microbes.

  • 100 mL of Kumis. Use your favorite brand. This matters, because every brand uses different bacteria strains. So you obtain a very similar kumis not only in taste but also in nutritional properties.

  • Sweetener: I use 1 little spoon of Stevia, which is made of a plant leafs, it is 400 times sweeter than sugar. This makes my kumis very low in calories, exactly with 300 calories less than the commercial kumis that contains 100 g per liter of sucrose or fructose.

Procedure:

Put onto a liter container the milk and add the kumis, swirl both liquids, then put its lid. Let the mixture at room temperature for 24 hours. By this procedure you are inoculating the bacteria Lactobacillus from the kumis into the milk, in order to do fermentation of the milk sugar lactose into lactic acids plus various vitamins, I.e. B12, and other important nutrients beneficial to your body.

After this time lapse, mix the sweetener, do this step only after the 24 hours fermentation, if you do it from the inicial moment, the bacteria can produce unwished substances, so quality diminishes.

And.... done

Keep your kumis in fridge into its container, it can last a week.

In next kumis batch production, you can use your own kumis as seed, so you do not have to buy kumis anymore.

How much money can you save, by doing your own kumis?

In my case this is very simple to calculate:

Milk for kumis 2L day; cost: 2 usd= 730 usd per year.

Cost of 2L/day of kumis for a year= 1460 usd.

Money saved= 730 usd in a year

What would you do with 730 usd?

Apart from your money savings, also you gain in health. Kumis is more promoter of human health, while milk do not, even there are people that cannot drink miltk, while everybody can drink kumis.
