S11-W6 "The Recipe of the Day: (Sri Lankan Eggplant Moju)"

I hope you are doing well...

It was my Birthday, and I prepared a special dinner meal for my family. My menu for the day included Egg fried rice, Chicken Curry, Dhal Curry, Sri Lankan Eggplant Moju, Cutlets, Fried Cuttlefish rings, Fied chicken, and Salad. This dinner meal tasted absolutely delicious and enjoyed by everyone in the family.

Birthday Dinner

I felt extremely happy to receive great compliments on the meal I prepared. Here I take a moment to thank my mom for helping me throughout the day taking care of the baby, without her it wouldn't have been possible.

For today's contest, I will be sharing the recipe for the most delectable Sri Lankan "Eggplant Moju".

Let's check for the Ingredients needed for Frying:

  • About 15 to 20 Pearl Shallots (adjust as needed)
  • About 15 to 20 Green Chilies (adjust as needed)
  • Thinly sliced Eggplants - 1 kg
  • A pinch of salt and turmeric
  • Oil for deep frying

Ingredients for the Moju Mixture:

  • 1 tbsp of Oil
  • 1 tbsp Grated Ginger
  • 1 tbsp Garlic
  • 1 tsp of coconut vinegar
  • 1 and a half tbsp of Mustard Paste
  • 2 tbsp Sugar
  • Pinch of turmeric to add a nice color
  • 1 tbsp Chili Flakes
  • 1 tbsp Chili powder
  • 1tbsp Pepper
  • Salt as per taste
  • Half an Onion, finely chopped
  • About 3 to 4 Cardamom Pods and Cloves
  • 2 small Cinnamon Sticks
  • Few Curry leaves and Pandan leaves

Utensils

Better if you could get a Clay Pot for cooking and a spoon made of Coconut shell, as this recipe contains coconut vinegar.


Step-by-Step Instructions for Deep Frying Eggplants, Shallots, and Green Chilies:

Step 1: Wash the Egg plants thoroughly in salted water and cut them into thin slices as shown in the picture below.

Step 2: Add Turmeric and Salt for taste and color and mix well until it gets well absorbed into the Eggplant slices.

Step 3: Heat up a pan and add in the Oil for deep frying.

Step 4: Fry Eggplants until it turns brown and crispy.

Step 5: Once done frying the Eggplants proceed with shallots and Green Chilies in the same way. Fry for about 2 mins and remove from Oil.

All deep-fried ingredients ready to go in the Moju Mixture:

Let's start preparing the Moju mixture:

Step 6: Add Oil to a clay pot and add Cardamom Pods + Cloves + Cinnamon Sticks + Onions + Garlic + Ginger + Curry leaves and Pandan leaves saute in oil.

Step 7: When all aromatic spices are sauteed add Turmeric + Chili Powder + Chili Flakes and Pepper, and mix all ingredients in low flame.

Step 8: Add Sugar + Vinegar + Salt + Mustard paste keeping a proper balance of sweet and sour taste.

Step 9: Finally add all fried ingredients to the mixture and mix well.

The delightful Sri Lankan Eggplant Moju is ready to be served.

When the Eggplant Moju is combined with other curries and meat items, the meal looks mouth-watering and feels amazingly delicious to the taste buds. The sweet, sour, and spicyness of the Moju was on point. It was a great dinner to enjoy with family and friends.

Thank you for sharing this steps of how to prepare this delicious meal. The steps are actually simple steps to follow. I will love to try the preparation but am not sure if I will see all the ingredients here in my side.
