For my morning coffee, I decided to try this one today.
It says "Strong," so I didn't fill the basket of my mocha pot completely.
Loved it. I also liked the one with caramel and orange. These blends have been a pleasant surprise for me--who has never been that fond of Juan Valdez.
For breakfast I made zucchini omelet. As you can see in the pictures below, I sliced some zucchini, sautéed it with a little bacon, and sprinkled it with freshly ground black pepper. Then I mixed the eggs and milk and added them in the wok. A little salt, of course.
I served the omelet with arepas and fresh cheese. The omelet was tender and juicy.
After we ate our breakfast, it was time for me to clean and cut up the two chickens we had bought at the super. I organized the pieces in plastic containers to store them in the freezer. I took one thigh and some of the breast for our lunch.
To accompany the chicken, I prepared a baked zucchini and eggplant dish that is very tasty, simple to make, and also very healthy.
Just cut the zucchini and eggplant into thin slices and arrange them in rows as shown in the photo. For each layer, sprinkle a little salt and on the last layer, sprinkle a little freshly ground black pepper and olive oil.
When it's ready, cover with freshly crushed garlic and olive oil.
I served everything with rice. And we accompanied our meal with a refreshing spritzer.
Below you can see my plate.
We had our afternoon coffee after that. No dessert.
I didn't want to serve any dessert because I was planning to make chocolate shakes to watch a couple of episodes of The Queen's Gambit--Love it, by the way! It's interesting argument and beautiful photography caught me 100%--.
...And so I did.
But when I was done making the shakes, the power went out.
I thought I had lost that one, but all of a sudden, the energy was restored. This is the emotional roller coaster we're used to around here.
Victory was mine in the end.
I had my delicious chocolate shake, watched my series, and then worked a little after that. No need of dinner after that.
And these were the highlights of my food-day.
I hope you have delicious and healthy meals today in good company :)
