How To Make Soft White Cheese with Nuts. Easy!

Getting of dairy seems to be the healthiest move anyone can make these days, and how good it is to know that we dont need to be deprived of our palate-pleasing sensations even after we made a decision to be good to our cells.

Many people confessed that they are addicted to having soft white cheese and they are not willing to give that up... not even for a better health.

Well, they dont have to, it seems.

Times have changed.
We can have it all now: food without guilt, body that we always wanted, cruelty-free treats, and even cheese that acts like medicine.

While I am still high on throwing my first Plantbased Cheese-Making Workshop in Bangkok, I thought I would share with you this very simple, easy way to make your own dairy-free cheese at home.
Anyone can do this, it is that easy. I like watching how many people who were never that passionate about food making... find themselves enjoying this process more than they ever expected.

We dont need much - a few ingredients, ten minutes of our time, a little bit of imagination... and voila - we have a soft white yummy healthy spread in the refrigerator waiting to satisfy our senses... and, unlike the old world cheese - our cells as well.

Let us get to this edible treasure then, shall we? !

We need:

1 cup of soaked nuts (pick your favorite: almonds, cashews, macadamias, pili)
1 T nutri yeast
1 t Himalayan salt
1/2 t Black Pepper
2 T lemon/lime juice
1/2 t garlic powder or fresh grated clove (optional)
2 T olive OR raw coconut oil
2 T coconut milk OR coconut kefir
Fresh - Dry Herbs/chopped nuts as a coating, if you choose to coat your creation.

Here are a few variations of this very same recipe - different nuts and coating, different flavors, same soft and white ah-mazing experience!

How To:

Blend together soaked (and peeled if using almonds) nuts with the rest of the ingredients, add any other spices or herbs that you like, if you want your no-cheese cheese to be even more tangy - add a tea spoon of apple cider.
Let the spread chill in the refrigerator for a few hours in a glass jar.
You can have it as it is, or take your creativity a little further - shape and coat your cheese any way you wish, while working your magic on a parchment paper.

Coating ideas:

Chopped Pistachios with cranberries,
Walnuts with sun-dried tomatoes,
Dry Herb Mix: thyme, rosemary, oregano, dill
Fresh finely chopped herbs - chives, dill, basil
Crushed three-color pepper corns,
Grated Avocado stone with black pepper... or whatever else your wild heart desires.

Serve with salad leaves (feta like), on a toast and rice crackers (chevre like), as a dip or a creamy sauce (diluted with warm water)

A Tip: if your mix does not blend so well - add a cup of water, blend again and pour the nut spread into the cheese cloth, letting it drain for a few hours in a refrigerator

I love homemade nut cheeses. My recipe is almost the same. I use a bit of agar agar as well so that my cheese is not that soft but still spreadable on toast. Just one maybe useful tip: Try to cover the cheese with different colors of pepper (spice) - the taste is amazing. I particularly like the pink pepper :)

Mmmm, thank you thank you! This looks and sounds delicious. I've been eating mostly plant based for a while now, but I will admit that I still give in to my cheese cravings now and again. I've been making a vegan Mexican cheese dip for a while now, but nothing beats creamy white spreadable goodness.

Yes!! I wanna try this. So the yeast gives the nuts a cheese consitency? Any way to get that hard cheese look? For the children's eyes. Lol

Thank you @sweetjoy. What makes our nut spreads taste like cheese - nutri yeast, lime/lemon juice, ACV, I used also Tamarind paste and Lapsi powder (spice from Nepal).. they add to that tangy taste. To make our cheese hard.. we use raw coconut oil.... after it gets refrigerated - we can shape it. My two nieces made a heart shaped cheese the other day :-) much love to you honey.
