Creamed Italian Cipollini Onions Recipe ~ Fruits and Veggies Monday @lenasveganliving
This is my entry for the #fruitsandveggiesmonday contest held by @lenasveganliving.
This is a very rich side dish...Creamed Italian Cipollini onions.
Nice small bite size Italian Cipollini onions that are sweet. Carmelized in butter with a heavy cream sauce. Hint of garlic and fresh parsley and a SPLASH of peas!
You can serve these with any meal. I love the flavor, creaminess, slight sweetness and richness from these little beautiful onions. I use garlic and parsley to flavor but you could add any herbs or spices of your choice. I have used basil, thyme, sage and rosemary in the past. The great thing about this recipe is that you can "make it your own". Make what you like and how you like. Enjoy.
Italian Creamed Cipollini Onions Side Dish Recipe
1 to 1 1/2 pds cipollini onions - purchased mine at Wegmans
1 cup frozen peas
1/2 cup vegetable stock
1 cup heavy cream
1/2 stick unsalted butter
salt and black pepper
pinch of garlic powder
1/2 cup chopped fresh parsley
Preheat oven to 375 degrees F
In an oven safe pan on low medium heat add butter and melt slightly.
I am using my cast iron pan.
Add peeled Cipollini onions, sea salt and fresh ground black pepper.
Cook for approx 2-3 min on each side.
Bake at 375 degrees for 10 minutes.
Remove from the oven and add about 1/2 cup vegetable stock.. You can use chicken, beef, seafood or water.
Giving that a stir, bring up to heat and let simmer for a minute or two.
Next, add heavy cream, black pepper and pinch of garlic powder.
Cook and reduce for 5 minutes. You can see it thicken.
Add peas and fresh parsley. Stir well and cook for 3-5 minutes until peas heat through.
Serve with fresh parsley on top. You can also grate some Parmesan cheese on top.
Enjoy.
