Fruits And Veggies Monday-Cucumber Salad and Steamed Asparagus
I am joining FRUITS & VEGGIES MONDAY initiated by @lenasveganliving.
I saw these rambutan fruits in my local market, and although they didn't look fresh, I still bought a handful of them to snack on. The outer layer on these fruits were very thick, had dark colors of maroon and brownish, which tell me I shouldn't buy them. However, I knew the inside would be just fine.
After cutting open the rambutans this was what I saw! The flesh was as juicy as it should be and had a light natural sweetness to it. Of course, there was a good size seed inside too and the price for a pound of these rambutans was $4.99. No wonder why they are listed in the exotic fruits, lol..
For a quick lunch, I made myself a big bowl of cucumber salad with my mom's homegrown cherry tomatoes, top with fresh mint and thinly sliced purple onion. I used Greek dressing on this with a sprinkle of salt and black pepper.
Asparagus is now at the end of the season here! I steamed two bunches of asparagus and just quickly adding butter, salt and black pepper at the end.
The plate looked very green, no colors, and as I was looking for something to add, but my youngest son had taken half of it already when I turned around. He is a very picky eater, so I was just happy that he is at least eating something good and let it go without a fuss :-)

Oh yes, rambutan is delicious, but also very expensive in our supermarket. It may be cheaper in Asian market, so I should go and check.

Are you talking about about the butter, @lenasveganliving ? If that is the one, I am sorry! I didn't think of butter as animal products but I can see the relation! Thank you for letting me know!
Yes It's the butter and Greek dressings Icy..........all dairy products are animal products.
Also, eggs, seafood, fish and of course meat. There is also gelatin that is made of animal bones. Honey and all bee products is animal product, but I can make exception there. Whey, which is mostly used to make protein powder is derived from cow milk. Unfortunately, animal products or by products are used in manufacturing of all sorts of things and they are impossible to avoid :(
I didn't Greek dressing has animal products in it for real; Thanks Lena for this information!
I am only guessing, Icy but I would be very surprised if it didn't . Well check ingredients just to be sure.
For sure from now on, I will check! I should have made my own with just olive oil and vinegar!
You can never go wrong with oil and vinegar...............or you can make it with cashews or avocado if you like creamy 🍇🍍🍑🌸🍑🍍🍉

That salad looks so good! My husband doesn't like cucumbers so I don't make them often. So glad your son liked the Asparagus!!!
