Fruits and Veggies Monday | Jackfruit Almond Cakes

Happy Fruits and Veggie Monday my friends! Hope you all had time for a little rest and relaxation over the past few days.

Perhaps a few of you had the chance to try out a new fruit or vegetable?


That’s the beautiful thing about Fruits and Veggies Monday! Each week as I visit posts from our community I learn about new recipes both old and new which are cooked from all over the world. It’s great! I’ve made a promise to myself to try new foods, and so far I haven’t been disappointed! I want to thank @plantstoplanks and @lenasveganliving for allowing us to experience this each and every week. We have so much to learn from each other, truly a blessing.


I have to tell you, each time I visit one of the local markets I see this very large fruit! It’s quite over whelming; in fact I can’t imagine someone buying it. Believe it or not, I neglected to take a picture of it; we’ll just have to rely on good old Pixabay!


Jackfruit

Did you know the jackfruit can weigh up to 80 pounds? Yikes! The outer skin is very tough and covered with spikes. Luckily I was able to buy slices of this guy!

Jackfruit is native to South India but is grown in most tropical countries. It is a member of the Moraceae family of fruits which also includes figs, mulberries and breadfruit. This fruit has gained much popularity as a meat alternative. It’s great when eaten slow-cooked and barbequed and tastes much like pulled pork. Green jackfruit can be purchased by can at most specialty markets. When the fruit is ripe it has a slightly sweet mango or banana flavor. Jackfruit contains 3 grams of protein per cup and it’s packed with healthy vitamins, minerals and fiber.


It took a while to remove the pods from the rind. All of my research said I should wear gloves to remove the pods. I quickly realized my research proved to be correct! Jackfruit contains a very stick residue which is difficult to remove. Each of the pods contains a seed which is also edible! Beautiful aren’t they?

I decided I would try making almond upside down cakes using my small spring form pans.
Alert: I would suggest using something with a sealed bottom as I did lose some of the sweet topping.


I used

Topping

  • Ripe Jackfruit (2 slices)
  • Fresh Blueberries (1 4/ cup)
  • Non-dairy butter (1/4 cup)
  • Palm Sugar (1/4 cup)

Cake

  • Almond flour (1 ¼ cup)
  • Gluten free flour (1 ½ cup)
  • Flax Seed (2 tbsp.)
  • Maple Syrup (3/4 cup)
  • Baking Powder (2 tsp)
  • Sea Salt (½ tsp)
  • Almond Milk (3/4 cup)
  • Coconut Oil (1/4 cup)

Palm sugar and…


butter are combined together in a saucepan over low heat. Stir until the sugar has dissolved. I lined the baking tins with Jackfruit pods and Blueberries. Pour the syrup over all.

Now the cake…


Combine all of the ingredients for the cake and spread evenly over the jackfruit and berries. Into the oven for 40 minutes at 350 degrees or until an inserted knife comes out clean!

These were fun! I Topped with Coconut Yogurt and fresh Blueberries! Individual serving size cakes!

I often think about your wrists and hands, hoping they're healing. Spring is here and there is so much to do, we have to be healthy right? (especially for the little guys :) )

These look like a lot of fun, and the coconut yogurt topping -- sheer genius.

They were fun to make....unfortunately as I said a bit of the syrup leaked....one of the pitfalls of experimenting, lol Thank you @thesteemengine :) Appreciate your kind words! As for yogurt...any time I say!

Now this looks really delicious my friend! Jackfruit does grow here but I've never tasted it, another must try after seeing your post!

Oh my I thought you would have great ideas for me! I haven't made many, I think perhaps in a cookie next? Cover your hands when you harvest the pods, they're quite sticky and the residue is not fun ;)

I still haven't tried fresh jackfruit! I really want to, though I have also heard about how sticky it is to cut up. I imagine it is worth it for a treat on occasion. Of course I'm looking at this when I hit that afternoon slump and really want a little snack to keep me going until dinner. We just finished off the last of our fresh strawberries, but I have plenty more frozen that are due for a little treat perhaps this week. ;)

Oh yes, I bought more strawberries just the other day, they looked so beautiful I had to. Not sure what I'm making yet though. This was hard to harvest, at first I tried it without a glove and yikes, it wouldn't come off my hand, lol So I would recommend covering the hands when you try it! (Wondering why if it's that sticky on your hands it isn't just as bad in your mouth -- why it doesn't leave some yucky residue there. Like trying to eat pine resin. You don't try that more than once.)

Well, this jackfruit (whole) was so big, I wouldn't have been able to carry ti! Perhaps some one carted it off before you got there, You'll definitely need help to get it home, lol Wear hand covering when you take the pods out or you'll be a sticky mess...it doesn't come off easily :) I'll look forward to seeing your recipes @cicisaja!!

😊 we have the jackfruit tree in my hometown.. and when I was in university, I lived at an old house with big back yard where 2 big jackfruit trees grown and ... guess what? I was the only one who knew how to check which one is well-matured to pick up and get it down from the higher trunk😊 I used to execute the fruit under the tree.. I did it on the banana leaves, none want to dealt with the sap of jackfruit. Thanks God, I learnt about it from my parents when I was a kid ( a fruit lover need to know everything about how to what..😊). The biggest one I ever picked up was about 15kg weight, 😂😂😂 I was a strong one in my youth, and it's all in the past.

There are 2 ways to clean your hand up from the sap, use the gasoline or the cooking oil, but better to avoid by using the plastic hand gloves😉. Thanks for the tips.. I'll share it when I find any of it soon, even only a slice from the veggie seller man.
