Fruits and Veggies Monday | Fancy Lemon Papaya Bars

DSC_0082 (2).jpg

Happy Monday my Friends! Here we are gathering again for another great week of Fruits and Vegetables!

Love seeing all of the new faces sharing their creations with Fruits and Veggies Monday! @plantstoplanks and @lenasveganliving have done an amazing job organizing this fabulous group! Fruits and Veggies Monday is such a wonderful way to exchange ideas, information and healthy recipes all over the world.

You know I love learning about new fruits and vegetables!

Thank you for hosting @plantstoplanks, I know you have quite a busy schedule, we appreciate the wealth of information and inspiration you bring to the Steemit community. @lenasveganliving, I hope you continue to share with all of us; we truly appreciate all you have done!

Speaking of inspiration...

my grandmother was a huge inspiration to me. From the time I was very young I spent a much of the summer with her. The kitchen was a special place, always something on the stove or in the oven! She had a huge garden in the back and between cooking and canning, we both loved baking together. (Now you see why I love to bake!) She made amazing pies and pastries and when I married she gave me a recipe box filled with her recipes. All were neatly written on recipe index cards. I still have that box and still refer to her recipes! Many I have modified ; substituting flours, sugars and eggs, trying to achieve that perfect healthy Grandmother's recipe.

One of my favorite recipes, Lemon Bars! These bars were tart and sweet, with a light cookie base. Oh were they good, I can taste them now! Well this is one of the recipes I have experimented with. Moving to SW Florida brings so many fruits to try.

I think my grandmother would like this one!

Fancy Lemon Papaya Bars

Tart and Fancy

Foundation

  • Almond Flour (1/2 cup)
  • Maple Syrup (2 tbsp.)
  • Unsweetened Organic Shredded Coconut (1 cup)
  • Sea Salt (dash)
  • Flax Egg (qty 1)

Fruity Filling

  • Fresh Papaya (3/4 cup pureed)
  • Maple Syrup (1/3 cup)
  • Fresh Lemon Juice (2-3 tbsp.)
  • Chia Eggs (qty 2)

I used both flax and chia eggs for this treat! Make both now and let them sit until you’re ready!

Start with a firm...

foundation by mixing all of the foundation ingredients in your favorite bowl. Add the flax egg, stir well and firmly press this coco-nutty mixture into a parchment lined baking dish.

Bake…

at 350 degrees for 10 minutes or until golden brown.

Light and Fluffy…

Filling is next! Start by peeling the Papaya, scooping out the seeds, and chopping into cubes. I pureed enough to make ¾ cup puree and saved the rest for morning juice!

Puree…

the papaya in your blender. It should be silky smooth and fluffy!

Lemon Juice and...

chia egg next! Whisk together the remaining ingredients and pour the filling over the foundation. Bake at 350 degrees for 30 minutes.

Lemon and Papaya work so well together! Lemon adds a neat twist to the natural sweet papaya! This is a light healthy fruity treat you will love.

Cheers to another great week of Fruits and Veggies!

The STEEM Engine

Sort:

I am a lemon bar fiend, but I don't know too much about papaya. I have an aversion to coconut too, so I might have to modify these if I were to try them out! They look delicious though. If I didn't know what was in them, I would probably snag one and scarf it down!

Your granny sounds so like mine, they came from the era where they would make maximum use of fruits and veggies by canning. I'm amazed at your Lemon Papaya bars, did the fruit flavour change much? Lovely post my friend!
PS I've searched everywhere but can't find your recipe for the peanut butter bar cookies you made last year, please help!

I know, if you're like me I miss her. I wish I could bring back some of those wonderful moments. I can picture baking with her and "working" in the garden. The Lemon really works well with the papaya, lifts the flavor but gives it the nice fresh tart of lemon. I like it. Is this the recipe you were looking for?

Let me know if you were thinking about another one :) Thanks my friend, I hope you enjoy them!

That's it, thank you my friend! I could not remember what it was called, will bookmark it this time. I also used to love baking with my granny, miss her and miss those days!

those do sound and look so good

We enjoyed them, thank you @tattoodjay! Your grandkids would love them when they visit :)

Ohh yes indeed I do think they would love them :)

Congratulations! This post has been chosen as one of the daily Whistle Stops for The STEEM Engine!

You can see your post's place along the track here: The Daily Whistle Stops, Issue 411 (02/25/19)

wow, i am sure Nanny would love this one! Pure YUM!

I still have that box and still refer to her recipes! Many I have modified ; substituting flours, sugars and eggs, trying to achieve that perfect healthy Grandmother's recipe.

can't wait to see how this adapted recipe book that YOU can pass on to your grandkids turns out, healthy grandma bird! XOXOX

That would be fun to publish, perhaps the Steemit app will come to fruition, we can do it together. She was a wonderful woman, you would have loved her. So much fun :) I learned a lot from her oxoxox thankee my sweet daughter!

Your grandma sounds like an amazing woman. My grandma has the same recipe cards so I know exactly what you’re talking about. Hers are written in neat cursive though… no one ever writes in cursive anymore, I love it. These bars look fantastic. The lemon twist sounds mouthwatering. Great post @birdsinparadise… I don’t think you could make a crappy post if you tried.

I loved my grandma, we had so much fun together. Sounds like your grandmother :) I know she was pretty amazing in your life! You are spot on about the cursive, I couldn't write so beautifully if I tried, hehe You would love papaya with lemon, woosh! I'm so glad to see you back here, I love your posts they always make me smile, I look forward to your energy and joy! Thank you

Man, that sure wasn’t a crappy compliment to read. Thanks for making me feel so good @birdsinparadise. The thing about Grandma’s is they are all the best. They all make the best holiday candy too. Haha… you know I’ll be seeing you over at your kitchen blog 😉

It has been wonderful to see how quickly this awesome initiative by @plantstoplanks took off - but then again, with her positive and vibrant energy, I am not in any way surprised!

wow, lemon papaya bars. I haven't tried one before.. thank you for posting the recipe.. now I would get to try your recipe. it looks really yummy and yet healthy

They're pretty tasty, I hope you'll check them out. Light, not too sweet! Thanks so much @ianbuza!

Goodness gracious I love this Monday family! Of course you all make me salivate every week with delicious entries like this, but the stories that go along with it are just so precious. I think we can all relate to the joy of pulling out a handwritten recipe card, even better when it has stains spattered about it to prove it is well-loved! Thank you for sharing this special memory with us. And of course for sharing this delicious recipe! This has been another week where I wish I had more time to make everything because I want to try all of the entries!

You are so kind Katie, always make me smile with your thoughtful words. You are so right about the recipe cards, the messier the better the recipe! My grandmother took such pride in sharing her recipes with me I am so glad she did. Each time I make one of her recipes I think about her. I know, Fruits and Veggies Monday just keeps getting better each week. Love this community, thanks for hosting! We're lucky to have you:)

And I'm lucky to have YOU all! 🤗❤

Thank you @proanima, so pleased you stopped in today :)
