Sundays Best - Monkfish Filet in Saffron Vermouth Sauce on Sepia Pasta with blanched Vegetables 📷>recipe guide<

Hi Steemians! For today i prepare a very easy and delicious meal with Monkfish Filet. If the name also sounds challenging, the preparation is very simple. As always step by step and with fresh ingredients!



Ingredients for 2 people:

250- 300g Monkfish filet
15-20 strings saffron
3 carrotts
1 courgette
1-3 onions (depending on size)
1-2 gloves of garlic
20g butter
80- 100ml Vermouth
500ml fish fond
salt & pepper to taste
200g sepia pasta
chopped dill 
herbals to decorate


1. Cut the monkfish filet into small cubes, season with salt and pepper and fry it in a little oil fast but hot! Put aside! Put the safron in 20ml hot water!






2. Bring a pot of water to boil. Prepare vegetables and cut into fine strips. Add the vegetables for 2-3 minutes into the  boiling water, remove and immediately pour into ice cold water. So the vegetable keeps a nice color and cook no further. Put aside.








3. Finely chop the onion and garlic and fry in the pan. Drain with vermouth and let the alcohol evaporate. Now add the fond and saffron mixture and boil. After 2-3 minutes, add the cream and let it 1/3 reduce.  Just before ending add the juice of the monkfish. Taste with salt & pepper!







4. Preheat the oven to about 200 ° C and place the sauce in a fireproof form. The vegetables also add the chopped dill and monkfish! Let it grate in the oven under the grill. Be careful it just need a few minutes !




5. In the meantime prepare the sepia pasta after instruction!



6. Serve and Enjoy!
