Cucumber apple salad with pomegranate and caramelised walnuts 📷>recipe guide<

Hi Steemians! My today's contribution is a fast-paced vitamin bomb with spicy dressing. 


Ingredients for 2-3 people:


1 cucumber
1 red apple
2 tblsp pomegranate seeds
a bundle of dill
150g  celery
a handful of walnuts
20 g ginger
2-3 tablespoons of honey
1 lemon
Salt pepper cayenne pepper to taste
3 tbsp coconut or olive oil
3 tbsp of water


1. Roast the walnuts in pan, add sugar, caramelize the nuts and  allow to cool.



2. Peel the cucumber, halve and remove the soft inside. Cut into thin slices (sry not shown). Peel the celery and thinly cut.



3.  Then squeeze the lemon, grate the ginger, put oil , water and a spoonful of honey in a bowl and mix it. Season with salt pepper and cayenne.


4. Now cut the apple in small slices (without the seeds) and mix immediately with the dressing.


5. Chop the dill and put all in a big bowl, mix it carefully.


6. Now chop the walnuts and provide the pomegranate seeds. Place salad on plate. Decorate it with the rest of dill, the walnuts and the pomegranate seeds.




Sort:  

Yes, I would call either extra virgin olive oil or coconut oil paleo friendly. Remember - could your grandmother have made it in her own kitchen? If yes, it's a real food fat.

Where things go astray though is the sugar. It's not on your ingredient list, but you use it to caramelise the walnuts. If you were to use a little maple syrup (or honey) to caramelise the walnuts, then it would be a suitable paleo side.

Especially if you serve the salad alongside a nice steak or some roast chicken ;-)

Thank you for your reply . To caramelize I used Honey ... anyway, no risk, paleo out.

Just change the words then from "add sugar" to "add honey" and it's paleo compatible. I didn't mean for you to take the paleo tag off. My comment explaining was enough for people to be able to see how to make it paleo.

Haha gutes mittel bei schnupfen :-) :-) Meine Oma hatte mir einen Esslöffel Löwensenf in den Mund gestopft...nasenspray war dann überflüssig :-) :-) :-)
