Curried Cauliflower - Food Journal Entry #6 (vegan recipe and photo shoot)
This recipe is a great way of incorporating more veggies in one's diet. Spices are to taste, so feel free to play around!
Curried Cauliflower
Ingredients:
2 T olive oil
1 medium onion
1 red pepper (or the equivalent mix of colored peppers)
1 cup cauliflower florets
1-2 celery stalks
1 clove garlic
1 14 oz can of coconut milk
1 T flour
1 T curry powder
1 t ground coriander
½-1 t ground turmeric
1 t ground cumin
salt to taste
fresh cilantro or parsley.

Directions:
Step 1. Mince the garlic and cut all the vegetables into bite-size pieces.
Step 2. Heat the oil in a pan.
Step 3. Add the veggies and garlic to the pan and stir-fry for a few minutes.
Step 4. Mix the flour and all seasonings and stir in, cooking for another minute.
Step 5. Add the coconut milk and simmer on medium heat for a few minutes, until the curry thickens.
Step 6. Season with salt to taste.
Step 7. Garnish with fresh herbs, and serve immediately.
