@mindhunter's sweet tooth returns: COCONUT AND DATE FUDGE! Hell yeah!

in food •  2 years ago

Coconuts seems to go well with dates for some strange reason - I discovered this on a recent trip to Israel. What better way to combine them than in a fudge! Yum yum! Makes 25 pieces.

INGREDIENTS:

250g of desiccated coconut / coconut flakes
8 large Medjool dates, pitted

@mindhunter METHOD:

  1. Blitz the coconut in a blender until it softens, then add the dates and blend again until fully combined.

  2. Spread onto a baking tray and slice it into 20 squares, then place in the fridge to set for 1-2 hours.

This fudge is surprsingly sweet, despite all the guilt-free ingredients. Coconut is full of fibre too.

I personally like to add some melted dark chocolate on top, as well as into the mixture at the first blend.

Enjoy your sweet fudge my fellow Steemians

You're rather far away for a toast, but maybe some day. Can I wear a kilt when in Scotland? I do have a Scottish ancestor somewhere down the line, a soldier named James Stuart.

·
·
·
·
·

You certainly can wear your kilt here no problem :) Some excellent genealogy skills going on there too.

Man! I can't leave this post now!!!

·

(how did we ever stray from path of fudge?!)

Wow, that's so easy and I happen to be addicted to medjool dates, so I always have some handy.

·

Be even better eating them alongside reading a new @cathi-xx poem ;) Get writing! Ha ha! (just been for wee sneakie at your timeline!)

·
·

I've entered all my new poems into competitions so I can't post them to Steemit yet. There was a funny roundel about how I toilet trained my dog to ring a bell and now he rings it when he wants "air conditioning" and one about a birthday cake that was covered in ants.
So it's either wait until spring or get on chat and I'll PM them to you.

Poetic surrealism eh. I can't wait to see one of them ;)
