@mindhunter's sweet tooth returns: COCONUT AND DATE FUDGE! Hell yeah!
Coconuts seems to go well with dates for some strange reason - I discovered this on a recent trip to Israel. What better way to combine them than in a fudge! Yum yum! Makes 25 pieces.
INGREDIENTS:
250g of desiccated coconut / coconut flakes
8 large Medjool dates, pitted
@mindhunter METHOD:
Blitz the coconut in a blender until it softens, then add the dates and blend again until fully combined.
Spread onto a baking tray and slice it into 20 squares, then place in the fridge to set for 1-2 hours.
This fudge is surprsingly sweet, despite all the guilt-free ingredients. Coconut is full of fibre too.
I personally like to add some melted dark chocolate on top, as well as into the mixture at the first blend.

sounds yummy - not a big fudge fan , toffee now thats a different matter all together....Bonfire Night soon for you guys so toffee is a must!!

I've entered all my new poems into competitions so I can't post them to Steemit yet. There was a funny roundel about how I toilet trained my dog to ring a bell and now he rings it when he wants "air conditioning" and one about a birthday cake that was covered in ants.
