I decided pie was necessary a few nights ago and this is what came out, the perfect marriage between apple pie and cheesecake. Just enough goat cheese to be creamy and tangy while still holding the apple pie integrity. And minature, because everything tastes better when miniature.

Ingredients:

Filling:

4 Apples peeled and sliced
1/3 cup butter
1 tsp cinnamon
1 c sugar
100 g goat cheese
1 quail egg
1 spoonful greek yogurt

Crust:
100 g butter, cold
1 c flour
ice cold water

Start by frying the apples in the third cup of butter until soft over medium low heat. Add the sugar, cinnamon and stir to combine and allow to cool a little. While the apples are frying, prepare the dough by blending the butter into the flour with your fingers. Add a small amount of water until the dough comes togther. Allow to chill while the apples finish cooking.

Add the goat cheese and the rest of the ingredients to the filling, it will not look appetizing. Roll out the dough, line 4 ramekins. Fill with the filling and top with strips of dough for the top crust decoration.

Bake at 350 for 20 minutes or until golden brown. Allow to cool completely before serving for best taste results.
