Gluten Free Crepes

I experimented with gluten free crepes, honestly expecting good results as the gluten isn't really so important in a good crepe. I just substituted Bob's Red Mill 1-1 Flour for the wheat flour and it turned out great!

Ingredients:

1 c gluten free flour blend
2 eggs
2/3 c milk
1 T butter melted

Blend all the ingredients above together until smooth. Heat a large sized shallow edged pan to medium, add some butter then like a third of a cup of batter. Tilt the pan around to coat the bottom and cook, on low until it's done. These can be used for sweet or savory applications.
