Mushrooms and tomatoes filled with red lentils | Gefüllte Tomaten und Pilze mit roten Linsen

You’re looking for the perfect finger food to bring to a party? Then you should try these cute stuffed mushrooms and tomatoes. They’re easy to make, super healthy and delicious - enjoy 💚
Prep time: 20 min
Portions: 10
Ingredients:
- 200 g red lentils (soaked and drained)
- 2 handful of spring onion, diced
- 5 medium sized tomatoes
- 5 medium sized mushrooms
- 3 carrots, finely grated
- 300 ml veggie stock
- salt, pepper, cumin, ground turmeric, paprika and chili to taste
Instructions
- Remove the stems of the mushrooms and the insides of the tomatoes.
- Heat up some drops of veggie stock in a sauce pan and sautée the spring onions for a bit.
- Dice the mushroom stems and add them to the sauce pan.
- Next, add the soaked and drained lentils and stir well.
- Add the veggie stock and the insides of the tomatoes and let simmer until the liquid is fully evaporated and the lentils are soft.
- Stir in the grated carrots and add the spices.
- Let the mass cool down for some minutes and fill the mushrooms and the tomatoes.
- Decorate with some spring onions.
