The snack I want to share with you today is green onion pancake which is very common and popular in Taiwan. You can have one when you see stalls selling it on the street, and Taiwanese people would like to taste it between meals. You can spread some sauce such as soy sauce, spicy sauce on the surface to add flavor. If you like, you can even mix the sauce and put them together!

Oh, yes, there’s one more thing you have to be aware of, only if you eat them when it’s still hot, it would be possible to enjoy the best taste of the pancake. Why? Because it’s the only way to have the perfect crispy taste of the pancake right after it’s just been wrapped from the pan! As you are having it in your mouth, you may smell the flavor of the green onion at the same time! I do think there’s a magic of this snack because lots of friends of mine are picky about some certain ingredients, and green onion is commonly be pointed out one of them. They don’t want the green onion to appear in any dish; however, they do love this “green onion pancake! ” I can’t explain it, and nor can they! lol

哈囉,今天要介紹的蔥油餅可說是台灣的平民小吃,當現煎還帶著酥脆口感的蔥油餅加上醬汁,那入口的療癒美味,讓大家即便要花些時間等待,也都還是心甘情願的在街頭巷尾排隊等候喲!它究竟有什麼吸引人的魔力呢?其中主角之一的蔥就是深不可測的學問啦,許多不愛吃蔥的朋友,卻莫名拜倒在蔥油餅的美味下,這真的是很奇妙呢!

現在就讓我們一起來瞧瞧到底需要的材料有哪些!

Ingredients & Steps

  • Green onion : 7~8 (chopped)
  • Plain flour : 450 grams
  • Hot water : 220 grams
  • Cold water : 110 grams
  • Salt : 2 tsp
  • Pepper : 3 tsp
  • Oil : little (lard oil would be better)
  • Sauce : as you like!
    (A little condensed soy sauce with squashed garlic would be recommended!)
  1. Prepare all the ingredients. Put the flour and salt in a pot first, and pour in the hot water and then the cold water. Mix it and wait for 15 minutes.

  2. Spread a little flour on the table and take out the dough on the table with gentle knead until the surface is smooth.(It takes about 5 minutes.) Tip 1

  3. Wait another 30 minutes. Tip 2

  4. Once again spread some flour on the table and some on the dough to prevent from sticking on both the table and your hands; besides, it would be easier to stretch out the dough. Spread the oil first, and then pepper and green onion evenly on the surface.

  5. Roll it up and cut into 8~10 portions. Seal the two ends of each portion and wrap the doughs individually. Tip 3

  6. Put oil (2 tbsp) on the pot, spread out the dough (one portion) on it and stir fry for 7~8 minutes until both sides are beautifully brown. Finished!

Tip 1 : We knead the dough to let the air flow out, and the pancake would be crispy when it’s well-done.

Tip 2 : Put the dough in a pot with a lid / clean cloth covered.

Tip 3 : Take the portions you need and keep the others in the refrigerator.

Believe me, once you have tasted it, you would fall in love with this simple but definitely delicious snack immediately. If you ask me what’s special of this snack, my answer is go and have a bite, and you would understand!
