In the previous recipe we could learn how to prepare aquafaba with chickpeas in today's recipe we will learn how to prepare a delicious Strawberry Mousse made with aquafaba, we will not use eggs as in the original recipe.
I am a fan of vegan desserts that can seriously compete with any dessert made with milk and eggs of animal origin, also offers us low calories and is totally suitable for anyone, especially for those who suffer from hypertension, diabetes or are allergic to eggs.
I also offer an alternative, a respite from the popular cocoa mousse recipe while delicious, I think the mousse can be adapted to almost any fruit.
Vegan Strawberry Mousse (with Aquafaba)
My secrets INGREDIENTS
♡ 180 grams of strawberries, and something else to decorate
♡ 2 tablespoons sugar
♡ A pinch of salt
♡ A squirt of lemon juice
♡ 4 tablespoons coconut cream
♡ 5 tablespoons aquafaba
♡ Sweetener (sugar, agave, maple syrup, etc.), to taste
Cooking time: 25min
The first thing that we will have to do is to obtain the cream of coconut, for which we will use a can of coconut milk without preservatives whose content is high in fats, what we will have to do is to leave the can inside the refrigerator during 24 hours sufficient time so that the cream is generated.
The next step is to wash, dry and cut the strawberries to process them in a blender, then in a large bowl pour the strawberries and add 2 tablespoons of agave for 30 minutes.
After half an hour of the strawberries in the bowl, drain the excess liquid from the strawberries and take to cook over medium heat until you get completely dehydrated, the result will be a kind of viscous mixture as strawberry syrup. Switch off and reserve.
With the leftover quantity of strawberries we will make a purée with the help of a food processor, to which we will add lemon juice, then we mix very well, we reserve.
Then place 2 tablespoons of aquafaba in a bowl with the cream of coconut, beat until we are a creamy mixture, this will begin to happen after they pass about 5 minutes, do not be afraid to observe much liquid, remember that it is not an egg, but the mixture is very creamy I promise.
The mixture of aquafaba and coconut cream will be mixed little by little with our strawberry puree, it is necessary that this step is slow and sustained, to obtain the final mixture of our strawberry mousse, the sweet part I leave it to your free choice, I have used only 2 tablespoons of agave and I am very tasty.
Now it is the final moment where we will use the 3 spoonfuls of aquafaba that remain to us to make a point of snow when it has this consistency we will add to the previous mixture, we mix well and ready we have our mousse of strawberries.
Just let it rest in the refrigerator for about 4 hours.
