My dear foodies,

Continuing with the Christmas tradition we are going to prepare a Catalan sandwich, which we will be able to prepare to enjoy in family in these last days of the year, it is a Coca of escalibada. The name escalivada comes from the Catalan verb "escalivar" which means, precisely, "to roast to the embers ". One could say that this is a kind of pizza but Spanish.

My number one recommendation for this dish is to roast the vegetables on the grill, as they will get a flavor that will not surpass roasting them in the oven. Of course if you don't have the possibility to do it you can do it in the oven, the original recipe usually has anchovies or meats, but as this is its vegan version, I think the same with the combination we choose of red pepper, eggplant and onion, will be super-rich, you can also use the base to add other vegetables, such as spinach, tomato and so that come to mind, the only requirement is that they can be roasted. There are salty and sweet varieties.

A historical fact is that the origin of the word coca comes from Dutch kok from the Carolingian Empire. Cake is derived from this same word.

My secrets INGREDIENTS

(for 4 portions):

♡ 1 red pepper

♡ 1 aubergine

♡ 1 onion

♡ 50 g pitted black olives

♡ Olive oil

For the dough:

♡ 400 g wheat flour

♡ 220 g water

♡ 10 g salt

♡ 5 g fresh yeast

♡ 5 g olive oil

♡ 5 g whole cane sugar (panela)

♡ 5 g white pepper

PREPARATION

Preparation time: 15min
Cooking time: 70min
Total: 85min

Preheat the oven to 180º.

Prepare the coca dough. Dilute the sugar and yeast in warm water and mix in a bowl with the rest of the ingredients. When they are integrated, knead on the counter for 15 minutes. Keep the dough in a bowl greased with oil, cover with paper film and let it rise until it doubles in size.

While the dough rises, roast the vegetables. Clean the pepper and eggplant and peel the onion. Grease the vegetables with a little oil, place them in a dish or tray and bake them for 45 minutes. Rotate the vegetables halfway through so that they cook equally on both sides.

Note that the baking time may vary depending on the size of the vegetables.

Peel, remove the seeds and cut the vegetables into strips once it is cold.

Preheat the oven to 230º.

Carefully remove the dough from the bowl and cut it into 4 equal pieces. If you do not want to make 4 cocas, you can freeze the pieces that you are not going to use.

Stretch the dough until it is 5 mm thick. Paint it with olive oil. Place roasted vegetables and sliced olives on top.
Bake the coca for 20 minutes at 230º or until the coca is golden brown.
