My dear foodies,

Today we continue with Italian dishes in their Vegan version, these are fabulous Cannelloni that is to suck your fingers. The base of the filling will be made with mushrooms and vegan Mozzarella cheese for gratin. I hope you have fun with this new creation that I'm sure you won't regret preparing it and sharing it with your family. Let's start

Vegan Canneloni

My secrets INGREDIENTS

(for 4 people):

♡ 20 cannelloni plates

♡ 150 gr. of textured soybeans

♡ Vegetable broth

♡ ½ onion

♡ 200 gr. of mushrooms

♡ 30 gr. of miso women

♡ Thyme and rosemary

♡ Vegan cheese for gratin (I used Tofutti mozzarella)

♡ White pepper

For the bechamel:

♡ 60 gr. of flour

♡ 60 g margarine or mild olive oil

♡ 1 l. vegetal milk without added sugar

♡ Nutmeg

♡ Salt

PREPARATION

Preparation time: 25min
Cooking time: 30min
Total: 55 min

In a small saucepan, put the textured soybeans and add broth until covered. Put the fire to the minimum, cover and let it cook until all the liquid has been consumed.

Clean the mushrooms and chop them into small pieces. Also, chop the onion. In a hot frying pan, add a generous amount of oil and fry over very low heat the mushrooms and onion.

When the mushrooms are well sautéed and the onion too, add the hydrated textured soy and the muji miso. Stir and let everything cook together for about 5 more minutes.
After this time, turn off the heat, add the thyme, rosemary and black pepper to taste. We do not add salt since the muji miso is already salty enough.

Cook the cannelloni plates according to the manufacturer's instructions and fill them.

Before placing the cannelloni in the oven dish, prepare the bechamel. On the one hand, heat the milk in a saucepan. On the other hand, in a hot frying pan add the oil or margarine and toast the flour until it takes on some color. Then add the boiling milk and stir constantly until there are no lumps of flour. Cook over medium heat for about 15 minutes. Remove from heat and add a pinch of salt and a pinch of nutmeg.

Put a little bechamel sauce in the dish and then put the cannelloni on top. This way the pasta will not stick. When we have placed all the cannelloni, cover them with the rest of the bechamel, put some vegan cheese on top and gratin them.

Scientists at the University of Bonn (Germany), and the ETH Zurich (Switzerland) identified an active ingredient in oregano - known as beta-caryophyllene (E-BCP) - that may be useful against disorders such as osteoporosis and arteriosclerosis.
