Hamantashchen recipe - Its Time for The Delicious Triangular Shaped Cookies!

It's that time of year to make these delicious filled-pocket cookies!


PURIM, one of the happiest Jewish holidays, with colourful costumes, cocktails and baskets of edible goodies,
is coming up in just a few days and with it come these HAMANATSCHEN - the popular triangular shaped cookie treats filled with a variety of fillings.

My family used to make this recipe when I was growing up, and now I am happily continuing the tradition and baking them with my kids while having some Purim songs playing in the background, to give us a fun start and feeling of the holiday :)
I love this dough because it produces a rich, buttery cookie full of flavor. As much as I am sometimes tempted to make them during the year, I keep my patience and leave it for the time that Purim comes in order to save that taste and smell especially for the holiday.

PURIM is a Jewish holiday that commemorates the saving of the Jewish people from Haman, who was planning to kill all the Jews. This took place in the ancient Achaemenid Persian Empire. The story is recorded in the Biblical Book of Esther 1.

The Hamantaschen cookie is symbolic- Hamantash is viewed as a reference to Haman, the villain of Purim, and symbolises the defeated enemy of the Jewish people.

Why are they called Hamantashen?

  • In Hebrew Hamantashen (plural for Hamantasch) are called “Ozney Haman”, which means: “Haman’s ears” and refers to the custom of cutting off a criminal’s ears before being executed.
  • Another interpretation for the triangular shape of the cookies is its resemblance to the three cornered hat worn by Haman.

The most popular/traditional filling is the poppy seed filling, however, any filling can go great with these cookies, such as: jam, chocolate, Nutellla, nut, halva, fruit, cheese and more.

The recipe here makes 30 cookies. When I make them I know I need to double the quantities if I want some saved for later, since they are eaten so fast once they are out of the oven! :)

-Hamantashen Recipe-

Ingredients: (makes about 30 cookies)


3 cups flour
200gr unsalted butter, room temp.
¾ cup powdered sugar
A pinch of salt
1 egg (large)
1 egg yolk
1 tbls vanilla extract

Fillings:


Poppyseed/ prune/apricot/Nutella/strawberry/halva

Method:


Prepare the dough:

  • Slice the butter into small chunks and place in the mixing bowl. Add sugar and cream the butter and sugar together. Add the remaining ingredients and mix until a crumbly dough forms.
  • Knead the dough with hands till a smooth dough ball forms (Try not to overwork the dough).
  • Wrap the dough in plastic wrap and place in the refrigerator to chill for at least 1 hour. Make sure the cookie dough is well chilled before you roll it out so it won't stick to your rolling pin/counter and tear.

Make the Hamantaschen:

  • Preheat oven to 350° F.

  • Place the dough on a lightly floured, clean surface and roll it out to about 1/8 inches thick
    Note: The dough will be firm after chilling and is easier to work with at room temperature. It may be a bit tough to roll out in the beginning, so you may need to pound it a bit (if it’s too cold, it will crack when you fold up the sides).

  • Cut out circles with a 3-inch rim of a cup or cookie cutter and place a teaspoon of filling into the center of each circle:
    Note: Do not put too much filling, otherwise the Hamantaschen will spread or open when they bake and the filling may leak out.

  • Bring 3 sides of the circle together to form a triangle - leave about 1/3 open and pinch the edges together:


  • Bake on an ungreased baking sheet in a 350° F preheated oven for 10-20 minutes until they are golden brown

  • Cool the cookies on a wire rack. Store them in a tightly sealed plastic bag or Tupperware.
    Before serving, sprinkle a bit of sugar powder on top and ENJOY!
