Vegan Fudgy Brownies

Raise your hands if you LOVE brownies! Me too! ❤️ This rich vegan brownie is my all time favorite. I usually struggle to reach the perfect texture: the best brownies are fudgy in the middle and crunchy on the top. My brownie recipe gives you fudgy, gooey and amazingly delicious chocolaty squares. Promise!

The batter has a secret ingredient which makes this brownie moist and gooey: there's grated zucchini is hid in this dessert. Don't worry, this green veggie is tasteless and invisible. Can you believe it? Practically you're eating vitamins and minerals in this dense chocolatey treat. 😀 First your batter will look very thick, but while the cake is baking, the zucchini releases it's own moister and turns your batter into soft and moist brownie.

This delicious brownie is egg-free and dairy-free, however you can easily turn it into gluten free and/or sugar free (using 1 cup Stevia or other sweetener) dessert. Enjoy!


Vegan Zucchini Brownies

Prep time: 15 mins | Baking time: 25 mins

Ingredients:

  • 1 medium zucchini, shredded
  • 2 cups all-purpose flour
  • 1½ cups sugar
  • 2 teaspoons vanilla extract
  • ½ cup oil
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 2 teaspoons lemon juice
  • ¼ cup dairy free dark chocolate chips
  • pinch of salt

Let's bake this brownie!

  1. Preheat the oven to 180°C /350°F. Grease and flour a baking pan.
  2. In a large bowl mix together the flour, cocoa powder and salt.
  3. Whisk together the oil, sugar, vanilla . Gently fold in the flour mixture. Add the baking soda, lemon juice and fold in the grated zucchini. Set aside for 5 minutes.
  4. Melt the chocolate chips, then mix with the batter.
  5. Spread the batter in the pan. Bake for 25-30 minutes.
  6. Remove the brownie from the pan, let it cool, then cut into squares.

Diet: vegan, vegetarian, egg free, dairy free
