GREEN SMOOTHIE OF THE DAY | CREAMY PEACHY CASHEW MORNING BLISS 🍑🌱🌻
Though peaches are rare in Cambodia, my friends know how to surprise me. When they went to the capital earlier this week they brought back some peaches and other yummy goodies for me. Though I ate most of the peaches straight away, I had some left this morning to make a yummy, creamy green drink.
Combined with some of the last mangoes we had left in the freezer from our garden, this was another perfect start of the day... and even better... It's weekend. Wednesday and Thursday are our closing days, so we invited our friends over for a cookout. Looking forward to some time to unwind and relax. Just what we need after a hard week's work in the bakery.

CREAMY PEACHY CASHEW MORNING BLISS 🍑🌱🌻
INGREDIENTS (serves 2 for breakfast)
2 cups spinach
1.5 cups water
0.5 cup cultured coconut yogurt
2 tbsp raw cashews soaked overnight and drained
2 tbsp coconut oil
2 cups peaches
1 cup mango
2 passion fruit
1/2 tsp vanilla extract
Goji berries (optional topping)
DIRECTIONS
- Soak cashew nuts overnight.
- Blend spinach and water until smooth. Add the remaining ingredients and blend again. If the smoothie is too thick, add more liquid base. If you have a high-speed blender, throw everything in at once.
- Optional: top with toppings/superfoods of your choice. I used goji berries this time.

Yummy! Another great looking smoothie. I miss getting my homegrown peaches when I lived at my parents house, and nectarines. My mom would freeze them and I would make epic peach or nectarine milk shakes with it. mmmm I have a peach tree in my garden, but it hasn't produced yet. Probably because it is tired of being in a pot and wants to be in the ground. hahaha.
That sounds like heaven. Wonder if you would be able to grow them here. And get that bugger into the ground lol
mmm that is a good question. It may not get cold enough. Stone fruits need a certain amount of chill hours to set fruit. How cold does it get there in the winter? haha I need to buy a house with a yard first! lol I don't have any yard at my townhome to plant it in. haha
In between 20-25 is the coldest it gets... But hey we have so many other fruits here. Maybe get a bigger pot haha
Yeah unfortunately that is not cold enough to grow like peaches and nectarines and other stone fruits. lol yeah I could maybe get a bigger pot. lol
