稀豆粉

大理人都非常喜愛喝稀豆粉,早上賣早點的攤位上都有賣。稀豆粉已成為大理的大眾美食之一。每日餐食中都少不了它的身影。

稀豆粉是用上好的豌豆磨細成麵粉狀,後經煮製成稀粥狀而成。首先把豌豆粉和水倒進鍋裡煮。在煮的時候要不停地攪拌,火不能太大,火大了容易把稀豆粉煮糊,糊了的稀豆粉是很難吃的。火要小,要耐著性子用筷子不停地攪拌,攪著攪著,水慢慢變稠。
這時就要特別注意了,不能煮得太稀,也不能煮得太稠;稀了吃著滑嘴,稠了則粘嘴脣;不稠不稀最好。再用筷子插入鍋中,隨手提起,懸一股流線就可以了。吃起來十分的爽口,有清暑熱的功效。

稀豆粉的顏色是淡黃色。盛在碗中,撒上少許的蔥花、加上一勺紅紅的辣椒麵(因人而宜,能吃辣可以多加些),少許花椒麵、米醋、芝麻油、還有花生碎等,哇!寫著想著,口水已經要止不住了。而與雲南本地朋友吃飯,都會點上一份稀豆粉。可見,稀豆粉已經成為雲南人民不可或缺的食品。
