今天給大家介紹南澗鍋巴油粉。
南澗鍋巴油粉是雲南省大理白族自治州南澗縣彝族特色風味小吃,拒今已有上百年的歷史。剛開始我還不會吃,後來慢慢覺得非常好吃。
南澗鍋巴油粉,它的主要原料有:幹豌豆、芝麻油、精鹽、菜籽油。其中最難的一道工序是製做鍋巴。
【首先將豌豆粉攪拌成漿,過濾乾淨,倒入塗油鍋中,均勻塗漿,並注意掌握好火候,這樣做出來的鍋巴才能色澤金黃,厚薄均勻。鍋巴出鍋後,把過濾好的豌豆漿汁徐徐倒入沸騰的開水鍋中,同時不停的攪動,到漿汁粘稠透明成熟後,熄火起鍋,將鍋巴一層、熟粉一層漿汁依次鋪好,即可製成色鮮味美的鍋巴油粉。】
做好後的鍋巴油粉,先用刀切成條狀,再切成塊狀,配上辣椒油、醬油、酸醋、特製的醬、花生碎、姜沫、香菜沫等等多種調料,一碗香香的油粉可以開始吃了。油粉軟軟的,粉質細膩,入口即化,鍋巴香香的,口味別具,深得人們的喜愛。
