Fermented dino kale
This morning I went out before the sun came up and harvested our large kale. That was in order to try and get the microbes on the plant at their most active time before the sun comes up.

I used a ceramic knife and bamboo cutting board. The ceramic knife helps keeps oxidation from happening with the kale as metal can and often does oxidizes most food and water.
I then cut the kale up as fine as I could with the ceramic knife they all ended up being around 1600 G.
I then mixed with the plant material equal-weight sugar. I mix gently and I tightly squeezed all the plant material after thoroughly mixed with the sugar into the one gallon container we had. Glass or PPE plastic is fine. I then put a 2-inch sugar cap on the kale ferments I needed a smaller jar to fit it all.
I will store these two containers in our ferment pantry / food pantry for 5 to 7 days where the temperatures are 72 degrees to 74 degrees during the day and 68 degrees at night. We also have our back door open with the outside Breeze coming in
I made really good experiences with Kale plants. Very strong, and very responsive to watering and fertilizer. And they can survive winter. They also produce nice flowers and lots of seeds for future planting.
