Squash Sunday follow up part 1. Pumpkin pancakes with a cute little helper.

I know you've all been sitting on the edge of your seats waiting to find out more about my squash. I present to you the Pumpkin Pancake!
Last week we processed and froze 2 pumpkins and asked about some oddly coloured spaghetti squash.

The first step I do is melt the butter on the warming up griddle.

Then in 2 seperate bowls mix the dry ingredients and the wet ingredients.

Now with some help combine the dry and wet ingredients.

Remember kids who can make donuts don't turn out to be donuts!

Spoon the batter onto the preheated griddle(or frying pan) and cook until bubbles appear and then flip.
You do know how to make pancakes right?

Even though they taste like pumpkin pie you can still put whatever you want on. One kid likes maple syrup, the other likes strawberry jam and the other doesn't know anything yet except "give me more so I can rub it all over my face!"

There is only one thing better than pancakes: leftover pancakes! They are toaster size for easy re-heating.

Simple pancakes just got even better with pumpkin, didn't they? Must try this.

Dry ingredients:
1 cup whole wheat flour
1 cup all purpose flour
1.5 tsp baking powder
.5 tsp baking soda
.5 tsp salt
1 tsp cinnamon
.25 tsp ginger powder
.25 tsp allspice(I go a little heavier on these 3 spices)

Wet ingredients:
1 cup pumpkin
350ml milk
.25 cup brown sugar
2 eggs
2 tbsp melted butter
A little vanilla

Mix dry stuff in one bowl and mix wet stuff in a second bowl. Combine wet with dry and the cook.
Yumm.

To be honest when I scrolled down to the bottom, I was more interested in how cute your kiddos are and totally lost sight that this was a post about pumpkin pancakes.. LOL

Such a yummy post and the little helpers are just so adorable. My son has been asking me for quite some time to make him a pumpkin pie or anything pumpkin related but somehow I have been lazy to fetch a pumpkin, take out all the flesh and clean it. But I am thinking of making these pancakes for him sometime soon.

Cool, you can cheat and use canned pumpkin-I won't tell anyone.
