Cheesy Leek and Potato Soup with minced Soymeat

There is a very popular party dish everyone seems to crave and regret eating it right afterwards because it is so heavy and full of unhealthy stuff like lots of processed cheese and minced meat and a bit of healthy leek. It is inevitable that you feel supersaturated after eating it and get a hurting stomach. Oh! I actually never ate this myself because I was vegetarian for too long now. But I always wanted to veganize, improve and streamline this recipe and because we still live on winter veggies and it was a sunny but cold day today and it's getting even cooler the next days, this was a perfect day to try it.

I show you how I did it and I promise you, it turned out very delicious!

Ingredients:

  • 3 leeks
  • some floury potatoes 
  • some waxy potatoes 
  • some vegetable broth (this time it's selfmade from leftovers)
  • some plantbased cream (mine is oats cream)
  • nutritional yeast
  • salt and pepper 

Preparation:

First I peeled the floury potatoes, cut them in small pieces and let them cook in some vegetable broth until soft. I mashed them roughly with a potato masher.

Then I prepared the waxy potatoes and also cut them in small cubes.

I cut the leeks in rings and put them together with the waxy potatoes into the poth with the mashed potatoes. I added more vegetable broth and let everthing cook until done. When the vegetables were soft I added the plantbased cream and the nutritional yeast, stirred and seasoned with salt, fresh ground black pepper and a dash of white pepper.

I fried the vegan minced meat in a pan until dry and a little bit crispy.

That's how I served the dish:

It was sooo good! Next time I would make my own mincd meat from soy flakes, puréed tomatoes and some spices. The stuff from the supermarket was good but way too expensive.

I'm sorry to hear its getting colder where u are. At least its sunny! this soup looks like the perfect winter warming treat. never tried vegan mince meat but definitely one to win over my non vegan friends :) thanks for another beautiful recipe

I usually use these soy flakes which have to get soaked in vegetable broth and spices for lots of my recipes to mimic minced meat. My omnivore friends never noticed that my chilly con carne is actually sine carne. Or it's perfect for lasagna and stuff. That's what I use next time for this recipe. You are welcome!
