STORING THE SUNCHOKES FOR WINTER

We've harvested, and now it's time to store them!


After finally growing some Sunchokes (AKA Jerusalem Artichokes) for the first time ever, we had to store our harvest.

I chose to filly up five gallon buckets with soil and layer our harvest in between soil layers. Then, I stored the buckets beneath our mobile home. I am hoping that this sort of "natural refrigerator" will be just what they need to make it through the winter, or at least to keep until we eat them.

I was just thinking of digging mine up tomorrow.. I might have waited to long, but I've had a big ole layer of hay on top of mine... keep ya posted, I think that is just perfect how you stored them unless you get like 20 below or something....

oh yeah, and sawdust or dried cedar chips are good for storing spuds and sunchokes too :)

I think you can even make a makeshift root cellar with a buried bucket with a couple straw bales on top. But under a trailer house is a good idea too. I remember them always being cool underneath, even in Texas summers. Cool microclimates where we used to chase the biggest toads ever.

Those were the days. Man, we'd be out 18 hours a day in the sun and mud. Every trailer we could climb under without getting shot was our clubhouse 😂

Also...sorry man I just can't help myself. You said "I chose to filly up five" and then I thought, hum I have not had a Philly cheese steak sandwich in while now!

We tried several storage methods and found cheap pitting mix to be the best

Good storage method, I keep mine in the ground overwinter and they're sweeter harvested in the spring.
