Crisp-Tender Roast Duck - Homemade Dinner

Hi everyone, happy long weekend!!

I was thinking to cook my duck that has been staying in my freezer for quite sometimes, actually my husband got it for me,over 2 weeks ago. It’s funny that my husband never like duck until I cooked it for him. He doesn’t really like the smell, he told me once. But I have the trick how to get rid of the duck’s smell by rubbing them with lime/lemon juice and then leave it in the fridge for over an hour or so.
And today, unlike most of the time I normally cook whole roast duck, I tried a little bit different, I cut the duck into four but I still use the same recipe.

Crisp-tender roast duck with honey and sweet soy sauce.

Ingredients:

  • 2-4 shallots (depends on the size)
  • 5 cloves garlic
  • 5 cm galangal
  • 4 candlenuts
  • 3 cm turmeric
  • 3 cm ginger
  • 2 tbsp salt
  • 1 lemongrass
  • 3 lime leaves
  • 1 tbsp powder coriander
  • 1 tbsp ground pepper

For the glaze:

  • 2 shallots
  • 4 cloves garlic
  • 2 cm ginger
  • 2 tbsp sweet soy sauce
  • 1 tbsp honey

To Prepare

Step 1:
Wash,clean the duck, then cut into 4 pieces, rub them with lime juice, cover it up and keep them in the fridge for about an hour to get rid of the smell.

Step 2:
While the duck is in the fridge, blend together the shallots, garlic, galangal, candlenut, turmeric and ginger until fine.
and then, add in salt, coriander powder, and ground pepper.

Step 3:
Prepare the glaze:
blend the shallots, garlic and ginger.
move them into a bowl and add in sweet soya sauce and honey. stir, put aside.

Step 4:

  • Fry the the blend seasoning,lemongrass and lime leaves, keep stirring until the flavour comes out.
  • And then, take the duck from the fridge,put them in and cook for about one and half hour.
  • After that, turn off the stove and keep the duck covered in the pan/pot for another an hour to absorb the seasoning into the meat.

Step 5:

  • Preheat the oven to 300 degrees F.
    and when it’s ready, brush the duck meat with the glaze ingredients. Put the breast-side up, cook in the oven for about 30 minutes.
  • After 30 minutes roasting, turn on the oven temperature up to 350 degrees F, and turn the breast-side down and brush again with glaze and cook for another 30 minutes.
  • Repeat again one more time after 30 minutes.
  • Last, turn on the oven up to 400 degrees F and cook the duck for another 15 minutes.

It’s because I’m Asian, I do like to serve duck with some rice too.

Lemon Leaves Rice

  • 1 cup of white rice
  • 1 cup coconut milk.
  • 1/4 cup water
  • 1 clove garlic (smashed)
  • 2 lime leaves (chopped)
  • 1/8 tsp salt

Put all the ingredients into rice cooker, press the cooking button.

And, here’s my homemade chilli sauce

  • a bunch of red Thai chillies
  • 1 tomato
  • 2 cloves garlic
  • 1 shallot
  • 1 tsp sautéed shrimp fry
  • 1/2 tsp sugar
  • a pinch of salt

Fry them all together, and then blend or grind them till fine.

Serve!!

This one is a very Asian dish. I like to having my duck with rice and my homemade chilli sauce. And for sure for western people like my husband would never touch that devil chilli sauce 😂🤣
